I made these yesterday. I planned them for supper after reading that the dough only needed to dehydrate about six hours. Well, I needed to read the WHOLE recipe, because the prepared calzone needs to dehydrate 14+ hours! :eek:So I just had it for lunch. I have to say, even though I was not wild about the filling, the recipe as a whole RAWKS. I added mushrooms and cherry tomatoes and am very glad I did as the tomatoes made the filling good.
I did not do it the way Alissa describes in her book. Instead of making two half circles, I filled two trays from edge to edge, making two large squares. When the time came to assemble the calzones, I cut the dough into four equal pieces on each tray, and used a square for the bottom and a square for the top. So I ended up with four square calzones, about 5"x5". It was very easy to handle the dough this way. Half a square is one serving (I cut it on the diagonal, for purty), so it makes 8 servings.

As I said, I didn't love the filling, but my head is swirling with possibilities! Next time I make this, I am going to cut the dough into EIGHT rectangles per tray and make raw HOT POCKETS with all kinds of fillings! Some possibilities:
Pesto with mushrooms and green peppers
Fajita filling with smokey jalapeno cheese
Broccoli with rich cheddar sauce
Carrot pecan burger balls with marinara
Carrot pecan burger with mushrooms and onions and creme cheeze
Pizza sauce and toppings
Burger with rich cheddar sauce
I believe I will have a hot pocket making party with my girls next week. We will take pictures and let you know how they turn out. And if you can think of any more yummy combinations, post them here!
