The "brittle" in brittle candy is caused by sugar being cooked to the hard candy stage. Very difficult to duplicate raw, I would think. The best you could do would be to make "clusters" where the pumpkin seeds and spices are stirred in with just enough honey to make them stick to gether. Put on a cookie sheet and maybe dehydrate a little bit.

Raw brittle: cacao beans & butter, maple granules, Vanilla, Salt, nuts, berries
No idea the amounts, but they do dehydrate them.

Maple syrup or maple granules will "brittle up" in the dehydrator. It's not 100% raw but it is a common ingredient used in raw recipes.
