Hi all,

just got asked a question on studies that indicate a nutrient loss due to heating foods.

As a trained scientist I've had first hand experience with heat destruction of enzymes in the laboratory, and an understanding of heat labile vitamins and other nutrients, but am looking for one or two studies that sum it up to have handy.

Can anyone help?
