I have the actual fruit and some in a block that does not have the seeds...what can you do with it?
Makes a lovely chutney. Google a recipe and see if you can make a raw version.
It's also the flavouring in coca cola, it could be made into a juice or mixed with a sweetner and some sparkling water if you drink that.

Tamarind is often an ingredient in the delicious Pad Thai Noodles. I believe it adds a piquant sweetness to the dish. I remember it in my recipe books and You Tubes.

the fresh pods are wonderful! crack it open and eat the stingy pulpy stuff from around the seeds inside the pod :) very tart, though!
blend the paste with dates and a smidge of hot pepper for a dipping sauce, could add a bit of lime to it also...
:)
