View Full Version : Delicious Banana choc. Cream Cake

I've made this a few times. It is sooo yummy. In my recipe, I left out the honey/agave in the frosting and also the lecithin. Turned out awesome. The real trick is grinding the nuts down into a fine powder. I attached the pic of the one I made.

I didn't use a pan. I just shaped the first layer on the plate and the second on a teflex sheet. After applying the frosting on the first layer, just flipped the second right on top. Very easy. I have to say at first I was overwhelmed with the recipe, but once I did it, realized it was....a piece of cake :)

I think I'll have to make this tomorrow. It's been too long since I had a cake of any kind. And this one looks like a treat.

How do you make the coconut water? Do you soak the coconut first? And then strain it like when you do regular nutmilks?

It's actually coconut milk. You can either take the meat from a coconut, blend with water and strain or do it the lazy girls way like I did. I just used 1 part Raw Dried Coconut and 3 parts water, blend and strain. The recipe actually used the dried coconut the way I did. I've had it both ways and honestly the cake is so good, I never noticed much of a difference.

Yeah, fresh coconuts isn't an option for me even if I'd like to. So I'll have to do it the lazy way. ;)
Did you soak the the meat before blending it?

No, just put it in the blender with the appropriate amount of water (see recipe.) Infact I didn't even strain the pulp. The coconut milk will blend up with the ground cashews to make the frosting, so a little bit of coconut in there ain't a bad thing.

Here is a pic of the inside of the 2nd cake I made. Same recipe except frosting is made with strawberries.

Oh, I strained the pulp and used it for the cake.

Anyhow, it's setting in the freezer now. I loved the frosting but I think that 1/2 cup of cacao in the cake was too much, at least since the frosting isn't that sweet. I think I'll use 1/4 cup if I make it again.

Can't wait to see how it turns out all together. :)

It was way too much cacao for my taste. But the whipped cream and bananas was fantastic.
Even my girlfriend thought it was "ok". And she usually doesn't like nut based desserts.

the recipe should say 1/4 cacao, 1/4 Raw carob. I'm sure even all carob would be good too.
