I bought 4 the other day and 2 have been sitting in my pantry for maybe 10 days - 2 weeks. Are they still OK? I am thinking as they are not refrigerated at the store they have a good shelf life. I don't want to start a recipe though and have to run to the store. Any thoughts? Do you keep yours in the fridge? This is unopened I am talking about. Thanks.

It's the equinox!! How ya' doing?
I've kept mine for a couple weeks, easily. Occasionally, they're not good. Always check inside first. Often, when they're starting to "go," they begin to turn pink on the outside and the inside.
Once you get the water, you can freeze the meat if you're not ready to use 'em.

Actually, I have never seen them unrefrigerated at any store...hmmn?
The only way to know for sure if they're okay is to open them up. If the inside looks pink, purple or gray, it's no good. You can't always tell by the outside. I've had some that got slimey and moldy on the outside, but were fine on the inside, and one I thought looked perfect outside, but was purple on the inside (which I have found out is a fungus and should be avoided).

thanks both of you. I was planning to use them in a recipe tomorrow so I think I will open them today and be able to stop at the store if necessary.

ALways seen them in fridge in store...cant imagine them outside on shelf.

so I chopped em open and they were both fine after about 2 weeks in the pantry. Smelled fine, meat not slimy. Guess they don't need refrigeration!! Now we know.
That's interesting - I also have only seen them refrigerated. I buy them by the case lot at a local Asian market and even the cases are kept refrigerated.

So, I did some googling last night just to check and from what I read it seems they last 75 days once picked so you can count on about 2-3 weeks once you buy them from the grocer. They did say to refrigerate them as they would last longer that way. But I am assuming mine are fine since they smell fine. I will keep them in a cool place from now on though.

I see them not refrigerated all the time in asian stores. I often find these are the freshest as well.
I usually do try and store them in the fridge when I buy them, makes them last a lot longer.
