Hi,
I came home from the marathon yesterday and the whole fam was just exhausted so I didn't get to process the cashews I had soaking (but I did rinse them) so today will be two full days by the time I get home tonight.
Can I still use them? I will be so bummed to have to toss them!

I would rinse them properly and give them a taste. If they taste fine then they should be fine.
If you kept them in the fridge then there shouldn't be anything to worry about.

More than likely they are fine, especially if you changed the water. Just try one and see how it tastes. If it's bitter or just off, then toss them otherwise, go ahead and use them.

There cashews...if it's warm where you live they be bad. That was happening to my almond milk. I was leaving the nuts out on the counter & the milk was bad the 2nd day. Now, I always keep them in the fridge.

AHA! Thank you! It's warm now, but not generally. They absrob equal amount of water in the fridge as on the counter? Because I have been really bummed that my nut milk, for all that work, has only lasted 2 days in general.
In case anyone else has this problem, I tasted them they were almost iffy made the nutmilk anyway and had it this morning but that's probably it's only use and should be thrown out today. I feel fine.

Yeah, cashews... only 6 hours are necessary although I've seen where some say overnight ~ in the fridge. Now almonds can go up to about 48 hours ~ with rinsing and fridge.
