I've fallen in love with avocado chocolate pudding! Tastes like the "real" thing, only better yet ingredients are few and process is so easy!

The trouble is the avocados themselves. The crops this spring/summer have been consistently bad. There have been times where my usual supplier doesn't even have them and when they do, they're almost completely rotten. And when I find them with other grocery chains, they're so expensive I can't really afford them. And these more expensive ones aren't even organic!

Anyone have any recipes for choco-pudding, as I call it, that tastes even only "almost" as good as the avo-based one but doesn't have that as an ingredient??

I like to alternate my puddings at lunch time -- one day I have chia pudding (the first pudding I started making consistently), then the next day I have the choco-pudding.

Though the chia cost me a fortune, since I paid over $10 for about a cup and a half of seeds, each pudding serving takes such a small amount of seeds that though I've been having this pudding a couple times a week or so over last few weeks, I still have a lot left of that first batch of seeds I bought!

So it would be really nice to have a couple of choco-pudding recipes as an alternative to the avo-based one so that I can continue to have a great pudding for lunch.

Thanks.

Here's a couple ideas:

Sun Warrior Chocolate Pudding
3-5 Tbs Sun Warrior Protein Powder Natural
¼ cup Cacao (or less)
½ -¾ cup Agave or other sweetener
Dash Cinnamon
Optional: Vanilla
½ cup Water
Blend. Chill in freezer for short time or longer in fridge.

Shelah's Chocolate Mousse
½ cup Walnuts
4 Dates
2 T Carob and/or Cacao powder
1 tsp Vanilla or 1 in. vanilla bean
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1 cup Water
Blend water & walnuts. Then add the rest of the ingredients.

I make something like a chocolate pudding from chia seeds. I blend some soaked nuts (almonds or cashews) with enough water to make a milk. Then I blend in some ground cacao, a tablespoon of coconut oil, some honey or agave, some vanilla extract and some soaked chia seeds. Thickens up nicely, but has the tapioca like texture of the chia. Sorry the recipe isn't more exact, but I'm a seat-of-the-pants cook.

Raw Food Real World has an amazing chocolate pudding recipe...way way better than using avo's. It has young coconuts, maple syrup, cacao powder. I use 1 packet of stevia and cut down on the maple syrup.
