....what would you make. Yummy pleeeeze>>>>>>and quick and easy too.

Well I sure wished I climbed a tree in Jamaica but I can dream right?

So I have the flesh from three coconuts all out with the water...what can I make.. I would love someyummy ice cream. Anyone know how to make it. Couldnt find it in ALissas book.

I have an ice cream maker of sorts...the one you put in freezer and freeze the base then plug it n and it stirs and stirs.

I would be so grateful I might take ya to Jamaica to climb a tree with meeeeeee. thankx a buncha coconuts.

I might try putting the meat in the food processor with frozen peaches or bananas, or raspberries, a little orange juice, a few drops of vanilla. Whip it up and call it ice cream.

You could also chop it up and freeze it. Then get another coconut and put all the meat and water in the blender together with some dates (or sweetener of your choice), handful of cashews, spoonful of cacao, a handful of mint leaves, and 1/2 t. of vanilla. Put that in your ice cream maker, or blend in some ice cubes for a chocolate mint shake. That I have tried! So rich and amazing! I shared a blender full with a friend last weekend. It was comical because we couldn't stop ourselves from making YUM noises with every sip.

AMAZING Raw Vegan Bavarian Vanilla Custard

This is TO DIE FOR, sorry. SERIOUSLY, the general summary from all who have it is, "Um, this is pretty much THE BEST DESSERT I've EVER had". A good friend of mine found the recipe, wrote me like 8 paragraphs about how great it is FIRST - and I'm quoting her here "Buy your coffin BEFORE you try it because you will DIE when you taste it!", then she got mad at me 2 weeks later when she found out I had NOT made it yet. I FINALLY made it 2 weeks ago (many months "overdue"), and OMG, it is UNREAL! I see why it pained her so: my life was so deprived before! (LOL) The flecks in it from the vanilla bean are amazing, just like Breyers disease-causing & inhumane albeit delicious vanilla ice cream....

2 cups young coconut meat (tough to say - 4 - 6 young coconuts?)
1/2 cup coconut water
2 tbsp. OJ
1/8 tsp celtic salt
1 vanilla bean
1 tsp. vanilla extract
1/4 tsp. almond extract
1/4 cup agave nectar
1 tbsp. soy lecithin granules
1 tbsp. coconut oil (I use expeller so it doesn't taste coconutty)

*Note: I'm Italian, so I use a bit more almond extract. Like EVERY Italian dessert is "Amaretto" flavored. LOL! But NONE are as good as this!

HINT: THIS IS PRETTY MUCH MY CUPCAKE FROSTING, I JUST USE A BIT MORE COCONUT OIL, SO IT WILL "SET" IN THE FRIDGE. YOU CAN ALSO USE IT AS A MIDDLE LAYER FOR A CAKE... I DID!
