View Full Version : Why is my biscotti chewy?

Hi everyone,

I've been lurking for several months and have learned soooo much here, THANK YOU!!

Made this Oatmeal Cookie Biscotti (http://www.thedailyrawcafe.com/search/label/snack) (scroll down the page to find it) because it's been mentioned several times on the forum.

Problem is that it always comes out chewy, never dry and crunchy. Does anyone have any ideas why this may be happening?

IMHO....agave and honey in cookie type recipes makes things moist...I substitute maple syrup and everything comes out very crisp. It isn't raw but it works for me....other wise just keep dehydrating longer.

Great idea about the maple syrup, I'm going to try that next. I am happy to report that no one in my family minds the chewy biscotti. It's the first raw snack I've made that they got excited about :-)
