Hi all. I'm experimenting and trying to adapt a recipe to Raw (or as close as possible).

I've read that some kind of seed, when soaked, can be used as an egg replacement. Does that ring a bell for anyone??

Grinding whole flax seeds breaks the hard outer shell, creating a light and slightly oily powder. Because the seed is already broken, you do not have to worry about chewing like you do with whole seed. Thus, flax seed meal is easily processed by your body, providing lignans and fibre, plus the omega-3 fatty acid, alpha-linolenic (ALA). You can add flax seed meal easily to many cooked and uncooked foods, and it can act as a thickener or fat substitute in recipes. Because grinding releases the oil, some care must be taken in the storing and handling of meal. Sold to consumers in kilogram or pound packages, flax seed meal is only slightly more expensive than whole seeds.


As an egg replacer - Flax seed meal is very useful to vegans as a
replacement for eggs in baked goods recipes. You can use a water/flax seed meal mixture instead of an egg in recipes, such as pancakes, muffins and cookies.
One-egg substitute formula:
1 Tbsp. Flax seed meal (ground flax seeds)
3 Tbsp. Water

Instructions:

Mix the flax seed meal and water in a small bowl. Let the mixture sit for two
to three minutes to thicken it, before adding it to the recipe.


As a fat replacer - Flax seed meal can replace some, or all, of the fat such as
margarine, shortening, or butter in a recipe. Baked goods with flax as a fat replacer tend to brown more quickly than regular recipes, so you may have to modify normal cooking times.

Fat substitute formula:

The substitution ratio is three parts flax seed meal for every part oil
or fat you are replacing. For example, for 1 Tbsp. of fat to be
replaced, use 3 Tbsp. of flax seed meal.

I think that flax seed is what it was. Cool!

Question. If I am replacing the fat, do I just add dry meal, or do I add water to it (like the egg replacement)??

Excellent posting. Flax seeds are great. I grind to the very fine powder and add to salads. When I have yougurt a mix with flax seeds. Yes, I agree it is not vegan and not good from the food combining point. But it taste delicious ,-).

I think he was referring to his yogurt, not the flax seeds.

Flax seeds work well to replace eggs, as they have a similar action in binding foods together. I believe I have read that chia seeds work as well, but I have never seen chia seeds in my grocery stores (even while traveling) so I haven't tried them.

We picked up some "Hi-lignan" nutri flax last night. It's a powder. Is this the right stuff?

How do you know, that I am he not she? LOL Just jokinig.

Yougurt is my caveat in my raw food diet. It is not a vegan food and it made using heated milk. Guilty as charged ,-)))).
Flax seeds do have a lots of carbohydrates and protein. The rule of food combining is not to mix dairy with other proteins and carbos.
Well, I do it sometimes. Most of the times I add 3 tbs of grinded flax to my
salads.

I don't think you want the powder. I think you need the whole seed, in order for it to get slimy and stick like eggs.

Crap. Figures I'd get the wrong stuff. Meal or whole seeds. Got it. I'll need a pestil or something similar too I guess.

I use an old coffee grinder. It works beautifully!

..but I couldn't help but notice you're from "Freddy Beach". Is that as in "City of Fredericton", cause that's where I live!!! Imagine two raw foodies in a small, conservative (but thinks it's liberal) Canadian city!

You betcha! I'm a Veggie/Vegan/Raw right now I guess. I don't try to fit into a bracket as of yet, but definitely am aiming at Raw. Loving the Raw green smoothies though.

Liberal for sure...definitely some conservative things going on though.
