I'm new to dehydrating. I tried to dehydrate a number of vegetables, and I cooked them at the recommended temperature and for the recommend duration. They came out sort of soft and rubbery. I was hoping to be able to get veggie crisps. Any ideas as to what I might be doing wrong?

Hi! You are not doing anything wrong. Veggies will not crisp up like the typical ones pre-packaged. These are either fried or baked and probably coated with something to "crisp" them.
The only Raw crispy veggie I have had luck with is kale chips.
When other veggies are dehydrated they become more like leather or jerky-type consistency, which I like. but it's an acquired taste...
