ARE *** YOU *** READY!!!!!!!!!!!

A HEARTY GOOD MORNING EVERYONE!!!! It's about that time!!!! Time for ANOTHER 30 DAY THREAD!!!!!! Here's What I'm planning for week 1:

:::NOTE::: THE PHOTOS OF THE FOOD FROM ALISSA'S RESTAURANT, GREZZO, IS ON PAGE 12 OF THIS THREAD....YOU WILL NEED TO SCROLL DOWN TO SEE THE PHOTOS.

WEEK 1: The pages are all from ALISSA'S Book, Living On Live Food

Bananas, Berries, & Cream (Pg 443)
Kim Chi (Pg 299)
Eggplant Parmesean (Pg 402)
Spinach Mushroom Quiche (ANNIE TWISTED MY ARM!!!!) (Pg 433) ***think I may move this to Week 2
Banana Leather (Pg 524)
Angel Hair Pasta w/Marinara Sauce (Pg 395)
Zippy Tomato Soup (Pg 360)
Snicker Bites (RFT)
Eggplant Bacon (RFT) (added)

BTW, My kids (ages 11 and 7) want to join me on this Challenge!!!! YEA!!!!!! I'm incredibly excited about that!!!!!!! It's gonna help a LOT not having to cook for them during the day!!! But, it means that I'm gonna have to be more prepared than ever to make sure that they have enough to eat. They LOVE the Smoothies and most of the meals...especially the Nori Rolls, Collard Rolls, Eggplant Pizza (with the Marinara Sauce instead of the nuts), and things like that. My Son is allergic to most NUTS (except Almonds), so I'll just use mostly seeds for him.

Last night, I started out by making the Cream for the Bananas, Berries, & Cream (For my SON I will alter it by making Alissa's sauce from the Crepes to pour over the Bananas & Berries), and I made the Eggplant Parmesean--which I'll have today for dinner (I have Maranara Sauce left over from this, so I'll use that and Spiral some noodles for my SON'S dinner--adding some Avacado to it...). I also got plenty of fruit and things to make Smoothies and Salads. Gotta go find my camera to download the photos...

I am SOOO Excited about this!!! Looking forward to many more changes this month!!! I have some NEW Challenges to contend with this month...keeping my kids interested being one of them... But, I'm up for it! Doing the last 30 days has prepared me to continue more focused than ever!!! My best friends are joining me this month and it's such a priviledge to help them!!!

EXERCIZE: A couple of weeks ago, I twisted my ankle, so I can't do running on a treadmill, but I can do a slow walk, work with weights, work with my band, or do an exercise tape, so I'll do some of that today.

Thankx rennee for offering suggestions. This is one thing lacking in my raw world is the prep. I like to keep it simple yet then I have nothing for when I want something special thus I eat cooked...ugh.

You inspired me to try and buy the book. Its a heap of money for me right now.

I personally think day 31 would be the way I would go, so that when people are looking at the thread there is no confusion of which thread came first. ALSO, it technically is NOT day 1, you have 30 consecutive days under your raw belt, something to really be proud of. I am looking forward to the next 30 days. Congrats on your kiddos joining you!

Blessings,
Heather

WEEK 5 DAY 31:

Thanks so much you guys!!!

Here's some photos so far:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/MYlastDAY30days001.jpg

Today we had the Banana, Berries, and Cream. Here it is for DYLAN (allergy to NUTS) who had it with Alissa's Strawberry Sauce from the Crepes...

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/MYlastDAY30days002.jpg

Here it is again with Alissa's Sauce....

LUNCH TODAY!!! I made Alissa's Zucchini Pasta w/Marinara Sauce and a Salad. I did let the kids have regular Ranch Dressing for the Salad cuz Dylan can't have nuts and Sydnei (my daughter, Age 7) didn't like it. Dylan wasn't crazy about the Marinara Sauce...I don't think he likes dates..., so I'll make a different one next time for him.

...to be Continued (They only let me have 4 pix's per post...)

Gotta make some more snacks for the kids or they'll be heading for Chips and Icecream!!! I have lots of Bananas freezing for RAW icecream (Dylan likes Choc added)...

I also like Alissa's Choc Cake a lot better Frozen. ...SOOO Good!!!

I can't decide which pictures I like better, the food or the kids! In a couple years, you're going to have to beat the girls off with a stick, your son is so handsome. I have an 11 yr old boy too who's vegan, but lately I can't seem to get him to try new things, he just likes same old, same old.

Anyways, just wanted you to know that I followed your other thread daily, just never got around to sending a message. So glad you are doing it again. YOU ARE TRULY AN INSPIRATION!

Hey Yau'll!!!

Thanks everyone for your kind words!!! Today was definitely a good day! I've been an uncookin' lady today!!! Sydnei helped me...

NOTE: I took the photos of the kids off of the thread for personal reasons...

I really want my kids to enjoy RAW and have a variety to choose from, so I asked them what THEY wanted and they said that they like Alissa's Banana Leather, Eggplant Bacon, and Onion Bread. So, I made all of it!!! This way, they have a lot to choose from and they won't get bored or frustrated. I also have plenty of Fruit on hand for them (fresh and dehydrated). Here are the trays that I made today:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/SydneiRAW004.jpg

So, my un-cooking for DAY 31 is COMPLETE!!! I made:

Bananas, Berries, & Cream (Pg 443)....................(Had for breakfast today!!!)
Eggplant Parmesean (Pg 402)............................(*made the night before--Had for Dinner today)
Banana Leather (Pg 524) .................................(dehydrating now)
Angel Hair Pasta w/Marinara Sauce (Pg 395)........(Had for Lunch today w/Salad)
Eggplant Bacon (RFT)......................................(dehydr ating now--added for my kids)
Onion Bread............................................. ......(dehydrating now--added for my kids)

On Day 34, I will make:

Spinach Mushroom Quiche (Pg 433)
Zippy Tomato Soup (Pg 360)
Snicker Bites (RFT)

Until then, I will enjoy the delicious meals that I have made!!! I warmed up some of my Eggplant Parmesean (EP) in the dehydrator...YOU GUYS!!! It's better than yesterday!!! Definitely one of my favorite recipes from Alissa!!! Got some EP left in the freezer along with some Noasted Turkey I made last week.

I must tell you, making all of this did take some time in the kitchen. But, it was SOOOO worth it! My kids helped out a lot...cutting veggies, gathering ingredients and reading recipes. They were my official "samplers"!!!

Hi renee,

I noticed the plastic wrap over a couple of your trays in you DH. Is this a way of keeping the other flavors from mixing with the other trays?

Also, what a FABULOUS idea having your kids join you!!! And they WANTED TO!?! Incredible!!! That would most definitely keep me raw. I'm going to challenge my two older girls to do this. You ARE an inspiration!

Thanks for continuing your 30-day challenge.

Hi everyone!!!

Chelle, unfortunately when I bought my dehydrator, it didn't come with any Teflex Sheets, so I use Plastic Wrap...works great for me, till I can get some. I just wipe it down and reuse it, if it can be reused, or just start with a fresh sheet every time...depending on what I'm making. Even if I had Teflex Sheets, I wouldn't use it for the Banana Leather cuz my kids like to peel it off of the plastic like Fruit Roll-Ups...

I ***KNOW*** that I said I wasn't gonna make anything else until Day 4, but I just couldn't HELP myself!!!! :D I made Alissa's Kim Chi this morning... OMGGGGGGosh!!!!!!! You GUYS....It's SOOOOO GOOD!!!!! I can't stop eating it!!!! I had the ingredients and it looked so simple to make, I just HAD to make it!!!!

OK Renee based on your glowing recommendation I just made the kimchee. There wasn't much liquid in the dressing. And it called for 1 tablespoon of salt:eek:. Did you do it exactly? Do the flavors mingle overnight even though there wasn't much dressing? Of course I could just wait till tomorrow but just wondered if you did it exactly. Thanks

Yes, I followed Alissa's directions EXACTLY...except I added Mung Bean Sprouts. I too wondered..."HUMMM...what's this gonna taste like? Not much dressing!!!!" But, I was pleasantly surprised!!! The flavors just mingled together the longer it sat. Also, the Napa Cabbage easily wilts when in marinade. It's good to me!!! And, my Sydnei couldn't stop eating it!!! She had 2, YES, 2 helpings of it!!! That's BIG for Sydnei!!! She even asked for it for dinner!!!!

What the kids did, though, is make an Avacado Sandwich (Page 440 in Alissa's book..) with the Kim Chi inside of a Romaine leaf, then put the Nori around it and ate it like a Nori Roll. They LOVED making their own and rolling it up!!! Try it with the Nori! You may like it too! Let me know, o.k... :)

Hey you!!! LOL!!! :D Well, gotta be honest... I took off of work the last week!!! Notice none of my posts last week said "getting in from a RED EYE"!!! :D I took a little "mini vacation" so I could start our first week Homeschooling and totally dedicate myself to my family. That's how I've been able to do some of this. My schedule changes every month, but this month I mostly fly on the weekends...(with the exception to this past week.)and be off during the week for my kids...

Tonight I went to a gathering with a few friends, and had a BLAST!!! The hostess knew I was RAW, so she made a RAW platter with veggies just for me!!! Wasn't that SWEET!!!

Well, Renee, I'm so glad you are at this still! I want to echo your comments on the eggplant parm - I made it several days ago and it is awesome.

I had zucchini pasta on Friday and I used Alissa's Summer Tomato Sauce and it was yummy! Your son might like that better than the marinara.

Your children are adorable! How great is it that you have inspired them to raw!

Thank you for all your efforts on behalf of all of us!

Hey Annie...

That's really great about the freezer! It'll become your best friend, after the dehydrator!

A quick question about the Spinach Quiche...It says to make 4 Shaped Pizza Crusts... How "BIG" do you make them? When they're done, do you pile the layers on top of each other, or do you have 4 Separate Quiches? I'm thinking about 1/2ing this recipe...is it REALLY a LOT? I know that MOST of Alissa's recipes are HUGE!!! Thanks!

ReneeH
09-13-2009, 06:13 PM
Annie...I'm gonna wait to make the dish until I hear from you about the above ?....

This morning I had 2 Bananas w/Granola Cerael and Milk. Then, I had a HUGE SALAD w/Eggplant Bacon and a slice of Onion Bread on the side. Oh, I also had the rest of the Kim Chi that was in the frig.... I like it better at room temp, not cold. Sydnei requested it AGAIN!!!! I couldn't believe it!!! There is something about it that she REALLY likes...that's cool!!!

Gotta work tonight, so I'll be taking fruit with me and anything else RAW I can grab in a jiffy cuz I gotta leave the house in a few minutes!!!!

I MADE MY "TO GO" BAG... (The Baggie Has Flax Crackers and Onion Bread, Salad and Eggplant Bacon, and Fruit...)

Talk w/you RAWbies tomorrow!!! :D

Hi, Renee,

Yes, it is a big recipe, but I froze 3 of the quiches. I took 1/4 of the batter and spread it into a circle on the teflex sheet. After they had dried I "piled the layers" on top of the crusts, and dried again. In my BR (Before Renee) days, I only made half of a lot of recipes, but now in my AR (After Renee) days, I made the full recipe and freeze. Enjoy!

This is in my dehyd right now. A caveat: Don't add all of the banana at once. My batter was too runny to form into a loaf so it is spread out to make bread slices. Next time, I will start with one banana and see what happens. It is kind of a fiddly recipe, since it takes 3 days to sprout the wheat berries, but I think it will be good. I added a little salt, too.

Actually, I went in and deleted the photos of my kids. I kinda felt uneasy about posting them in the first place, and after discussing it with my Hubby, I decided to take it out...just felt safer that way. I don't think anything would be done, but it's better to be safe than sorry...

And, the Soup I will make fresh tomorrow when I have it with the Quiche. I'll prob put it in the Dehydrator and warm it a bit before I eat it...

I woke up this morning and was going to start a thread about this. When I did my last fast it started the day before my period. I noticed a major difference in my attitude during. It was like a calmness that I don't usually have. I wondered if it had to do with the fasting or if I was just out of my mind. I'm glad you posted this. No PMS huh. That's fantastic!!!

Thanks Annie!!! I'm gonna start making it today!!! You know, I was WONDERING about the Banana Bread!!!! Yes, please let me know how you like it!!!

Reporting on the Banana Bread: As I said, mine was too thin and I had to spread it out, so it is more like a cracker than a bread. However, the flavor is good, and I will make it again. Next time, though, I will stir in some chopped walnuts or pecans and make it a Banana Nut Bread. Yummm~!

I'm happy for you with the PMS. Since I am way too old for that train anymore, I can't report on how raw affects it for me. But raw affects so many things in a happy way that I am never going back!

Getting my freezer stocked with some yummy things.

Today I am dehydrating apple slices sprinkled with cinnamon. The apples are just so good right now!

Thanks for all these posts, Renee.

Hi Everyone!!!

I'm so glad that this thread is so inspiring to so many!!! :)

Well, my Kids wanted Alissa's Enchaladas for Dinner, so I'm making that right now so it'll be ready tonight for them. For lunch I made a Huge Salad w/Avacado (gotta make some more Eggplant Bacon...we're OUT ALREADY!!! I saved the Marinade from the last batch, but it looked rather cloudy, so I think I'll just start again fresh...). I had Alissa Zippy Tomato Soup with it. I thought it was good, but...

Here are the Snicker Bites (you can get the recipe here on RFT.)

These are DELICIOUS!!! They Freeze So WELL!!!!! Try 'um!!!

Good morning Green Woman!!!

No, the Snicker Bites and Eggplant Bacon are NOT from Alissa's book, but they are from Alissa's Site (RFT), so I thought it would be o.k. to add them to my Challenge. Even in Alissa's book she uses recipes from Ann and Elaine, so I also added Onion Bread since my kids love it. Here are the links for those:

Hi, Renee,

Thanks for all the great efforts on our behalf.

In your last thread you showed pics of the food you took on the plane with you. You said that all of the "liquids" were in 3 oz containers. What kind of containers do you use that TSA will allow? I don't need much in my quart-size baggie so I can take some sauces, dressings, etc. I am taking a flight next week and have a long layover at ORD. Don't want to be tempted by the food courts and certainly don't want a $2 banana - that I can take with me. But I'd really love to take some zucchini pasta and marinara sauce. Can you clue me in a little? (Don't want to be tempted to hit Steak and Shake when I get to my destination!)

Are you losing weight? So glad your kids are doing this with you. I wish just one person in my SAD family would do it with me, but so far, no takers. They are all proud of me (from a size 20 to a size 8!) but I am just happy with the way clothes look on me. Going thru all those sizes is expensive!

Thanks again, and congrats!

Annie

You are SO welcome! Thanks for "bumping" it so that others can see it! :)

What kind of containers do you use that TSA will allow? ...I'd really love to take some zucchini pasta and marinara sauce. Can you clue me in a little?

I got my containers from the Dollar Store! You can also get some from Walmart... As long as they are 3 oz containers, you shouldn't have a problem. I put all of my food in my soft cooler and I've never had a problem...even if I'm out of uniform. I think one time they asked me what it was and I told them it was Marinara Sauce for my pasta and they said o.k....

If you Spiralize the Zucchini before you leave your house, it WILL keep for a while and actually become more "Spagetti-like" in texture. I like my noodles better that way. Even when I'm home, I'll let them sit on the counter for a while before I eat them.

Are you losing weight? ....They are all proud of me (from a size 20 to a size 8!)

Yea!!!!! I'm DEFINITELY losing weight!!! And, congratulations on your weight loss!!! WOW!!! What a loss that was!!! It's "that time of the month" right now, but I'm still maintaining my loss, so I KNOW that RAW has made a difference. I'm not gonna weigh until my 60 days are over though... But, I know that I've dropped a dress size! My uniform is fitting better, and I'm not having PMS the way that I used to!!! ZERO CRAMPS!!!! :D ...which is AWESOME!!!

So glad your kids are doing this with you. I wish just one person in my SAD family would do it with me, but so far, no takers.

Me Too!!! Hey, gotta tell you what happened yesterday. For Dinner they were being kinda "picky" about what they wanted to eat...I was getting frustrated, so I fixed them a plate of the SAD food I made my Hubby and "called it a day"... Well, they REFUSED TO EAT IT!!! They stood right over the SAD plate and said, "No, Mom... We're staying RAW! We're sorry...we'll eat what you're eating..." ISN'T THAT FABULOUS!!! I had made myself an Onion Bread Sandwich (using Onion Bread, Avacado, Lettuce, Tomato, and Sprouts) and a Salad. So, I made 2 more plates of that and they ATE THE ENTIRE RAW MEAL WITHOUT COMPLAINING!!! :D ...wish I had taken photos of THAT!!! :)

And hey, don't give up on your Family! They may come around by just continuing to see your progress. Continue to "invite" them to taste your food from time to time. When you DO eat RAW with them at the table, really show them that what you're eating is UMMM, UMMM, DELICIOUS!!!! Lick your lips, close your eyes, let yourself be "taken away" by the taste of it and SAVOUR your meal...right in front of them!!! Then open your eyes and say, "So, how's YOUR food!!!!" LOL!!!!

Hey everyone!!!

Here's what I had yesterday for dinner (Alissa's Enchaladas w/Salad):

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/EnchaladasSalad.jpg

Today I started off with a Fruit Smoothie (Almond Milk, Bananas, Mango, Papaya, Strawberry)...sooo good!!! Then, I had a Salad for lunch. I had some Grapes...couldn't stop eating them!!! Been kinda "nibbling" towards the Evening...mostly on fruit, some nuts. (I did have 1/2 of a donut...:(...my one defeat for the Challenge!!! Hey, it's that time of the month...what can I say!!! I'm back "CENTERED" and "FOCUSED" now, though!!! :))

Anyway, right before I had my "1/2 donut meltdown", I found out I got a layover in Boston!!! So I called Grezzo to see if Alissa would be there and was told she would be in a class, I decided to wait and take the trip when I originally intended to at the end of October. I'm disappointed...I want to go when I will be able to meet her.

Oh, Cris. I have lots of books that I will loan out and Alissa's is NOT one of them!

Renee: I remember from your last thread that you want to open a restaurant. I think you will have missed your true calling - being a raw food coach! You are doing such a great job of mentoring all of us through your posts and pics. I think you would be awesome as a coach!

Here's another way you've inspired me. I made the marinara sauce yesterday afternoon and dehydrated it overnight. I got up to a wonderful thick sauce. I just know it will be amazing on zucchini pasta. I am going to freeze some to take with me when I fly on Wednesday. I'm off to Walmart to find some 3 oz containers for sauces and dressings.

Thanks again, Renee!

Thanks you all!!!

Today I had a LOT of Watermelon!!! I got a good one and ate almost all of it!!! I also had a Salad w/Eggplant Bacon and a Marinated Mushroom...soooo good!!! I didn't have any lemon, so I used a lime for the marinade and it was just as good! I had another Mushroom left over, so I had it for dinner with the EASY SLAW...(I didn't like the Slaw at first...but, then the flavors came together after about 30 minutes and I couldn't stop eating it!!! SOOO GOOD!)

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/MuseumDayFOOD001.jpg

I also put together the Crusts to make the Quiche...

Hey Annie, is it supposed to look like this? I always picture Quiche with a Pie-like Shape to it... Is yours flat like this? Or, do you "pinch" the ends when it's almost solid? You know, like a pie crust?

Hey Annie, is it supposed to look like this? I always picture Quiche with a Pie-like Shape to it... Is yours flat like this? Or, do you "pinch" the ends when it's almost solid? You know, like a pie crust? [/IMG]

Renee, that's exactly how mine looked. Then I just piled everything else on top of the crust. Yummy. Could you believe how divine the crust smelled as it was dehydrating?

I think you're imagining the SAD quiche made in a large round casserole. I doubt you could make one large quiche and cut it in wedges because I doubt that the crust would dehydrate properly. Just my opinion, though. Others who are more knowledgeable may disagree.

At any rate, I hope you like it as much as I do.

As an aside, I found the 3 oz containers at WalMart and now I need to figure out how many of them will fit in a quart ziplock.

Would you consider starting a travel thread? I did a search, but it was mostly a waste of time, and you obviously have a LOT of experience with this.

Do you ever travel through ORD? If so, do you know a juice bar anywhere? I'd love to get a fresh juice to help hydrate while I sit for the next flight. I have a 4 hour sit, so have plenty of time to wander around.

Thanks again for this thread.

Would you consider starting a travel thread? I did a search, but it was mostly a waste of time, and you obviously have a LOT of experience with this.

I actually thought about that, but most of what I could offer to it is in this one and my previous thread, so that's why I haven't done it. I only fly domestic flights (and occasionally Canada and Mexico), so I'm not an expert on internationally flying overseas or anything.

Do you ever travel through ORD? If so, do you know a juice bar anywhere?

I do go to ORD!!! As a matter of fact, I'm actually from Gary, IN, so we fly to ORD and drive to Gary! I have never seen a juice bar there, though. They only have that one Au Bon Pain there on the left as you leave through Security (maybe get a salad there)... They also have a food court if you go through Security and turn right...go down the escalator. Nothing much there for RAWbies, unfortunately...

I know you must have made the corn chips. I am trying them now. Any helpful hints? And if you made them do you have a picture?

Hey Sprouts2Go!!! Yea, Alissa's corn chips are one of my favorites!!! I have tried them both ways (with frozen and fresh corn)... They both come out great...but I'm leaning more towards fresh corn. Here's a photo. These are with Fresh Corn:

DAY 39 (Yesterday)

I was unable to post because I had to work. I spent the night in Newark, NJ and packed plenty of "goodies" to take with me on my trip. Here's what I took:

* Fruit (Watermelon, Grapes, Clementines)
* Flax Crackers (Basic and Banana)
* Eggplant Bacon
* Pico de Gallo
* Alissa's Corn Tortillas (from the Enchaladas)
* Salad
* Avacado
* 2 Bananas

I munched on what I took with me and didn't even have to leave my hotel room or order anything. I also did ***30*** Minutes on the treadmill before I went to work and 20 minute Ab workout!!! :)

I must admit, it was hard being in NJ and not going to my favorite Barbeque place in Elizabeth, especially because the hotel was right across the street from it!!! But, I kept telling myself that I was NOT going to ruin my progress that I have made. I was so DETERMINED to stay away from that dead animal flesh!!!! I'm NOT putting that in my body anymore!!! Instead, I read in my room and focused on the food that I brought with me. And, when the craving passed, I was SO glad that I had kept my focus and NOT ruined my RAW diet!!! :) I'm pretty proud of myself today!!!

===========================================

Today (WEEK 6 Day 40) I had:

* a DOUBLE Wheatgrass Shot (Yea, BABY!!! There is a Jamba Juice in the Newark, NJ Airport!!!)
* Grapes
* Clementines
* Banana
* Salad w/my Avacado and Eggplant Bacon

I also did a 10 minute AB workout this morning before I left my hotel room this morning. For dinner, I'm gonna see what I have left over in the frig and eat whatever I have. Gotta finish the Quiches tonight. The crusts are done, just gotta make the insides...

HEY, I'M ***JAMMIN' on the RAW*** YAU'LL!!!!! :)

Renee, I think one of the reasons I'm enjoying your photos so much is because you present the food so beautifully. Honestly, I don't take the time to do that, and I should! I usually just chow down!

I'm flying through ORD, not in or out, terminal 3, so I will just have to check it out. I'm taking a lot of food with me on the plane. Goodness, that sounds like a lot of food you carried on. Is salsa usually OK and not count as a liquid? I want to take some tomato soup with me, but I doubt that I'll be able to get enough in those little 3 oz containers. I'm assuming you cut your melon, etc. Does that go through OK? When I fly, most of the flights I take are fairly short and non-stop, so I don't have long sits to contend with like this trip. I'm with ya, gal, and not going to succumb to any of the SAD food places.

Have you ever been to Karyn's Raw in Chicago? Going there for brunch next Sunday and really looking forward to it. I've put my family on notice that I'm eating raw, so they won't be offended when I don't eat their SAD food - my family are all great cooks!

Keep up the good work. Your determination and efforts are encouraging lots of us to walk the walk!

Hello everyone!!!

Well, had a LOT of fruit today...mostly Clementines. Made Nori Rolls for Lunch. I haven't been in the "mood" to eat any nuts or anything heavy today. Here are photos of my Quiche and RAWritos... :D The Quiche took forever to make for me!!!...not because the recipe was difficult, but I've had a busy week with working and homeschooling. The result was alright...not as good as I expected it to be, but not bad either. It did "smell" strangely to me a little, though...not bad cold, too.

The RAWritos I've made before and are always a hit! I also have some Pico de Gallo to scoop them up in...YUMMY!!!

Looking forward to a "Simple" Day tomorrow...just feasting on leftovers!!!

Annie, I've never had a problem with Salsa...I prefer Pico de Gallo, though...with is not as "liquidy" as Salsa. With the Tomato Soup...I probably wouldn't worry about it... Just don't take too much, though. You could just ask before you go through. If they say it's too much, excuse yourself to the side and drink it down. It might even be worth it to take a small hand blender with you and make the Tomato Soup in your hotel room... I've done that MANY times!!!

Yes, I do cut my Melon. It fits better if you cut it up & put it in a container. Never had a problem with that either.

Have you ever been to Karyn's Raw in Chicago? Going there for brunch next Sunday and really looking forward to it.

No, I sure haven't! Let me know how the food tastes, when you go!!! Take some photos, if you can... I'm off to make Elaina's Cinnamon Rolls!!!

Eggplant bacon..... I really must try that recipe soon.

Yes, you must!!! As you can see, I've been eating a LOT of it lately! It's a nice snack when you wanna eat something in a hurry. Just put the Eggplant Bacon on a piece of Romaine and tomatoes and go for it!!! Or, on top of a Salad, or just eat it like jerky! I always make at least 2-3 Eggplants every 3-4 days and that keeps me going.

Oh, BTW, here's what I had to eat at work last night...Same ole, Same ole....

I haven't made anything new cuz I don't get paid until Tuesday and my Money is kinda "Funny"... :p You know, when you look in your wallet and there's a distinct ECHO!!!!! Well, gotta eat what's in the frig until then!!! The good thing is, because Alissa's recipes are HUGE, I actually have LOTS of leftovers in the freezer (Quiche, Eggplant Parm., Noasted Turkey, and Choc cake...)

So, today so far I've had 2 Bananas, Marinated Portabella, and Alissa's Flax Crackers with Pico de Gallo. Been drinking a LOT of juice and taking a supplement of Vitamin C to get over this cold. Also had a couple of cups of Herbal Tea with Lemon and Agave. Trying to stay off Meds, though.... The interesting thing is that a lot of people that I know are sick right now, but I'm NOT as sick as they are!!! Most people that have gotten this have had it for two or three weeks. It's only been a couple of days for me and I'm still not as bad off as they are! I know that being RAW has helped me with that!!!

Actually, yes... My best friend and I made them about a year ago. It WASN'T pretty!!! For some reason, it didn't turn out as good as I'd hoped it would. It didn't dehydrate right....maybe not long enough, I don't know. I do remember the Spinich part of it being really good, though.

It's on my list to do again in my last week. I WILL NOT be defeated by the Calzone!!!! Maybe you could help me and talk me through it. I know that it's her "prize" recipe, so it MUST be good! I'm sure the fault lay with me and my "non-skills" in making it. :o So, alas...I'm gonna try again!

Hey Yau'll!!!

Well, I'm feeling better today! Ears still a bit clogged, but I didn't get NEARLY as sick as everyone else I know who got this nasty "bug"...!!!

So far, I've had a Green Smoothie (with the Mint this time), 2 Bananas, and Leftovers (Salad w/my Last Portabella Mushroom, Eggplant Bacon, and 2 of my Pizza's I made yesterday!) I ate 3 of my Pizzas last night--got the munches late and was so glad they were there!!!! Keepin' things simple, especially since I'm kinda broke this week! :p I do have plenty of RAW Veggies in the frig, though, so I can't complain.

I also have 2 kinds of Alissa's flax crackers to nibble on (Banana Flax - I put Agave on these and they are a GREAT snack!!! and Basic Golden Flax - I like to scoop up Pico de Gallo or Pate with those!!!) If I get the craving for Chocolate, I still have some Cake left in the freezer as well as Snicker Bites, so I'm all set.

HERE'S THE MENU FOR THIS WEEK (some of the things I've already made...):
WEEK 7:

Raw Ravioli (Pg 397) (unable to make)
Eggplant Bacon (RFT) (made, and re-made!!!)
Pineapple Boats (Pg 464) (unable to make)
Carrot Cake (Pg 490) (will make the last week)
Banana Crackers (Pg 347) (made these and Basic Flax Crackers)
Corn Chowder (Pg 356) (previously made)
Banana Bread (Pg 331) (unable to make)

Just wanted to check in 'wit cha!!! :D I'm not quite up to up to exercising today (getting over the flu), so gonna rest one more day then hit it tomorrow.

GoingToRaw, thank you so much for your support and encouragement!!! I am SOOOO HAPPY TO SAY:

Eva, LOL!!!! Girl, you crack me up!!!! Got a MENTAL PICTURE OF THAT!!! LOVE IT!!!

I HAVE DEFEATED THE SAD :::MONSTER::: TONIGHT!!!!!

Here's what I DID eat (I know you guys are probably tired of seeing this, but here it is...):

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/dinnertonight.jpg

I still had some of Alissa's Marinara Sauce left over, so I made some Zucchini Pasta. I also had some Not Tuna Pate left, so I put that with it and added a couple of pieces of a Marinated Mushroom that I didn't finish yesterday. Along with that, I made a Spinach Green Smoothie. And, let me tell you...it was SOOOOOOOOOOOOOOOO DELICIOUS!!!!! More DELICIOUS than EVER BEFORE!!!!

I had to call in "reinforcements"!!! I called my BFF's and they talked me through my "moment"... I also looked back at this blog and reminded myself of how far I've come. If I would have eaten that SAD food, it would have torn my stomache up and I would have been so disappointed with myself. RAW is the BEST THING that has happened to me. I ****REFUSE**** TO GIVE UP!!! Moments will come, and moments will go. But, I thank God for finding RAW and I will not give in to weak moments, with His help!!!

Of course, I had to wait until the smell cleared before I went downstairs (o.k., yea, I'm a "wimp"!!!! :o), but I think my problem was that I didn't eat enough today. All I had was basically Cerael and Fruit this morning. Next time, even though I may not be "hungry", I will make a Smoothie and not leave myself high and dry!!!

Thanks for the prayers!!! They ALWAYS help!!!

Hey RAWbies...

Well, I thought I was getting over this Flu buggg, but I'm still really "dizzy" and Congested. Doing what I can to take care of myself today... My daughter got it too, so we are taking a "sick" day off from Homeschool and resting.

I have been eating Fruit and Green Smoothies o.k. today... I did have a light Salad for lunch, but I feel "queezy", so I'm gonna lay back down and get some more rest. I'm just so glad my SAD moment passed and I'm glad I'm still RAW and didn't give in to it, even though I'm not in the mood to eat anything right now.

So, I'll check in with you guys tomorrow. Just gonna take it easy today...probably have another Smoothie later...

Well, I've been out of pocket for more than a week, so it's good to catch up with you, Renee. Sorry you've been sick. Kinda goes with your job territory, doesn't it? And congrats for not giving in to the SAD temptation!

Had Sunday brunch at Karyn's Raw in Chicago. Great food, but I learned something....... I don't do well with a lot of the "heavy" dehydrated things. At home I eat a small portion and that satisfies me, but of course at Karyn's I had to try everything! Loved the Hawaiian pizza, and wish I knew how they did it. I'm not good at analyzing food, so I probably can't duplicate it. Was very surprised at how small the cafe is. Maybe 20 seats.

Looking forward to some more of your great pics.

Keep up the great inspiration for all of us!

Well, I'm in my FINAL STRETCH YAU'LL!!!! My last 10 days of the Extended Plan. Of course, that does NOT mean that I will stop!!! I will continue to eat this way through eternity (I hope!!!)... ;)

I've learned so much on the journey. I've especially learned about myself--my weaknesses and things I need to work on within myself. Through cravings and weak moments, I've learned the importance of exercising Self-Control and continuing to keep my committment to myself constantly in front of me. I've done the best that I can do with exercising...wish I could have been able to do more. But, between twisting my ankle and getting sick, it was difficult to do more than a couple of days a week. I guess unforseen occurrances befall us all! :)

Anyway, I'm not summing this up yet.. I still have 10 days to go before I will complete my 60 day committment. I'm gonna make these 10 days the BEST that I possibly can!!!

Here is the menu of what I will make this week:

Calzones (Pg 390)
Mango Pie (Pg 496)
Cucumber Wheels (Pg 300)
Creamy Pea Soup (Pg 357)
Raw Veggie Stir Fry (Pg 430)
Carrot Cake (from last week)

I just went to the store and got some ingredients...stay tuned for photos!!!!

Congrats! When you get to 60 are you then going to extend to 90? I hope so! I'm also eager to hear about the weight loss!

Thanks you guys!!!!

I got up this morning with HUGE amounts of ENERGY!!! I did 60 minutes on the treadmill!!!!! Can you believe that!!!! Had lots of Clementines today... I am so thankful that they are back in season!!! And, I had 2 Apples. I also made Alissa's Veggie Stir Fry today...

Boy, a lot of ingredients here!!! But, I didn't let that scare me away! I got MOST of the ingredients, but some of it I couldn't find. It looks similar looking to Alissa's Kim Chi, but there is no Napa Cabbage in this one and the Marinade is different. Here's how it came out:

(Gotta find the photo to put it back!!!...bear with me!!!!)

The kids didn't like it... But, I think they were expecting it to taste like the SAD version...you KNOW how kids are!!! But I ABSOLUTELY AND POSITIVELY ***LOVED*** IT!!!! Alissa, this is DELICIOUS!!! I did put mine in the Dehydrator for a few hours to warm it a bit, but it's really good!!!

Reminds me of Carmella's version of Chop Suey, which I I love also. But, there is a difference in Alissa's version which is so GOOOD!!!! I really loved the Sweet Potato in it! Wouldn't have ever thought of that!!! I added some Bean Sprouts in mine and Spiralized my Zucchini (like Lo-Mein)... I LOVED THIS ONE, Yau'll!!! TWO THUMBS way UPPPPP!!!

I fixed enough for dinner, so I'll be having that with a Salad I think... Gonna have a Green Smoothie and make the Mango Pie later...I can't wait!!!

A1icia: Thank you so much for your kind words!!!

Today I had a bowl of Nuts/Seeds/Raisons/Banana w/Almond Milk for breakfast (sorta a Granola Quickie!!!) and then had a couple of Salads...still sorta gettin' over this "buggg"!!! It keeps lingering a bit...congestion and such...

I went to Whole Foods today and had to get some "staples"...(Nama Shoyu, Ume Plum Vinegar...etc) so that I can make some more Eggplant Bacon. I also got the things I needed to make the Calzone (the Buckwheat is soaking as I'm typing this!!!), but I could only find Buckwheat Groats... Hey Lucy, is that what you use? How long do you let them "sprout" for?

Gonna make this tomorrow:

Mango Pie (Pg 496)
Cucumber Wheels (Pg 300)
Creamy Pea Soup (Pg 357)

Have a RAWsome night!!!

I used "hulled buckwheat" and it sprouted. Do the groats look crushed or do they look like whole seeds? The hulled buckwheat looks whole, sorta like little double pyramids, but quite small.

Veganforlife
10-04-2009, 07:46 AM
The buckwheat in the photos IS what I use. They won't get tails like alfalfa sprouts do. I then dehydrate mine to make buckwheaties. Waaaay better than grapenut flakes...

ReneeH
10-04-2009, 07:52 AM
Hey Lucy...a few Questions:

1. Do they not sprout (even a little) for Calzones?
2. How long to you let them sit before you use them for the Calzones? (I soaked them about 6 hours yesterday then let them "sit" overnite...)
3. How long do you dehydrate them for Crispies, and
4. What do you add to it?

...THANKS!!!!!

I honestly don't remember what I used for the Calzones the last time.... That was about a year and 1/2 ago...

Veganforlife
10-04-2009, 08:16 AM
Ok. Let's see. I soaked for 6 hours, then "sprouted" for a couple days, risning like ALL the time. You can't over rinse. They may get a little "bud" on them.
For buckwheaties I soat, sprout and dehydrate until crisp. I dehydrate a lot of stuff overnight. taste and see if they are crisp after 4 hours.
I use it for a lot of different things; like cereal (almond mylk, berries, bananas, and buckwheaties). I sprinkle over ice cream; use in granola. Endless possibilities.

ReneeH
10-04-2009, 08:26 AM
That is SOOO COOL!!! I'm DEFINITELY gonna try that!!! I've been looking for something other than Granola (using NUTS) Cerael and this would be PERFECT!!!! Sometimes I just don't feel like eating anything with nuts in it...

So, I'll make the Calzone with some of the Buckwheat and Dehydrate some for Crispies... Thanks LUCE!!! You're the BEST!!!!

Hmmm, mine looks just like that but it sprouted like crazy. Just took a couple of days. I only soak it overnight, then do the rinsing thing. I have a sprout tube but also have sprouted in a bowl.

sprouts2go
10-04-2009, 03:53 PM
Mine sprouted tiny tails fairly quick. I did find out that some stores ONLY carry roasted buckwheat so make sure yours isn't roasted.

Seedy
10-04-2009, 09:26 PM
The buckwheat I sprout for buckies usually only takes two days. But you really need to rinse and drain buckwheat a lot when sprouting to get rid of the thick mucilaginous gel that forms around the groats. I like to add a little cinnamon and raw honey (or agave) to mine before dehydrating so the groats stick together a bit when done. Definitely better than Grape Nuts.

I have two Freshlife sprouters and literally overnight the buckwheat sprouts and some get little tails and some don't...

I put a bunch in to sprout yesterday morning and this morning they are in the "D" crisping.

These make a hearty breakfast with almond mylk and bananas or berries or both.

I like their crunchiness...

Renee, how are your children doing on their raw challenge?

They have been hanging in with me during the day... Different story when I go to work and they're with DH!!! But, I'm not being strict with them. I'm leaving it up to them to decide what they will eat when I'm away. Right now, they're high raw and I'm pretty proud of that. They did NOT get sick when so many people were the last couple of weeks. My 7 year old daughter got a brief touch of it, but it only lasted a day and she was up and about the next day!!!

Thank you so much!!!!

Which mango pie recipe did you use?

Almost all of the food on this thread (and my 1st thread) is from Alissa's Book, Living on Live Food.

==================================================

Well, today is my last day on this challenge. Tomorrow I'm going to simplify and join GreenWoman on her 60 day challenge.

It's been quite a journey for me! I've seen some things change in the two months I've been doing this. I know that if I had been exercising more, I would have lost more. I plan to change that the next 60 days. I've had so much fun making these meals!!! But, I really wanna find the simplier side of eating "RAW". Alissa said that would happen over time, and I think that is where I am.

When I first did this challenge, I had lost 23 pounds in 30 days. Going back and forth from SAD to RAW for almost 2 years, I gained all of it back and a bit more. When I started my new Challenge 60 days ago, my body was pretty much adjusted to eating mostly RAW. I weighed in at 205 pounds. At the end of my 1st 30 days, I had lost 13 pounds. Now, I weigh 185 pounds! Total loss for 60 days: 20 pounds!

my waist went from a 42" to 38"
my chest stayed the same (of course )
my Arms went from 15" to 11 & 1/2"
my Calf's went from 15" to 13"
my Thigh's went from 25" to 23"
my Hips went from 44" to 43"

*** No more PMS!!!! YEA!!! THATwas a HUGE change for me!!! Also, no more MIGRAINES!!!! No more depression!!!

***On the depression note, it's funny cuz my good friend, RAWSugarGal, is the one who told me that now the "Happy Renee" is back!!!! :) She said that she could see a difference in my personality when I went RAW this time.

My only regret is that I wished I had exercised more!!! That was my goal in doing the 2nd 30 days, but between twisting my ankle, getting sick, and working nights, I only exercised once or twice a week.

I am really glad I did the Challenge! It has helped me to stay focused on eating RAW and given me the choice and variety I needed!!! Alissa's book is PRICELESS!!!! I can't WAIT to meet her at the end of the month so that I can tell her in person what her book has done for my life.

Alissa's plan DOES work!!! It REALLY DOES!!! But, every person is different. The changes you will see will be different than mine. I've learned to be patient with myself. This is a JOURNEY. I didn't gain this weight in 60 days and I'm not gonna lose it all in 60 days. I knew that this was not a "miracle pill" when I started doing it. Exercise is a MUST for me. I know that. But, eating is also part of it. I feels SO GOOD to be RAW!!! I'm just happy to be on this road! And, I'm STAYIN' ON IT!!! :)

Oh Renee! I'm sitting here tearing up out of pure joy for you! I know what it's like to be sick and heavy and unhealthy and then to finally have an Angel come into my life (Alissa) and guide me to health.
I know this thread will be viewed by hundreds and reaching them. Thank you so much for sharing your journey!
I love you girl!!!

Dear Renee,

Wow, what a wonderful journey you've been on. Thanks for all of the honesty and insights shared along the way.
You truly are an inspiration!! I haven't been on RFT for a little while and when I saw your continuing thread tonight, I was compelled to read the whole thing through. Amazing is all I can say. The dedication that you have shown and the energy that you have shared with so many of us lucky enough to meet you via RFT is priceless! Thank you for committing to yourself, and for taking the time to post pictures and give keep folks posted on your journey.
Just being able to see the lovely photos you shared of so many of ALissa's recipes that I have only heard about, brought them to life in a way that makes trying them out so much easier and fun, thanks to you!
I seem to get stuck in recipe ruts and make the same pate, or burgers, etc.over and over.
Watching your colorful, and beautifully presented journey through ALissa's program has got me energized to try out some of the Living on Live food recipes I have never made.

Thank you once again, and I am sure you and Green-Woman will be Raw-kin out on your next 60 day journey. All the best to you, Raw Warrior Woman!!
peace,
Elena

I really appreciated your comment, Soulstar! It means so much to me that people have appreciated the effort I made to do this!!! I had so much fun doing it!!! Even though I'm gonna simplify the next 60 days, I will not totally let go of making my favorite Alissa dishes!!! Thank you so much for your thoughtful words!!! :)

I am thin and getting even thinner. Look great and feel great.

I guess I am ok right where I am ..simple raw.

That's great for you. It really is. I'm happy for you. But, at first this didn't work for me. I needed more of a variety than being simply raw was giving me. I'm so grateful to Alissa for her yummy recipes!!! Without it, I wouldn't be here... :)

Now, I'm READY to simplify. Alissa said that would happen because that is the way that this lifestyle is meant to be. So, you're ahead in the game. But, it didn't start that way FOR ME. I'm glad that I was able to inspire those on this board who, like me, needed a variety to choose from.

I'm sure I'll continue to lose the weight that I need to lose, but I'm honestly NOT focused on that. This was a committment that I made to myself and it feels so good to have seen it to a completion. It really does! :)

Renee, I am just thrilled for you, and for all of us whom you inspired along the way. Contrats!!! I really understand what you are saying about eating more simply - I was doing just that when your first thread came along and you made me realize there was a time for more complicated foods, too. So, I have enjoyed making a lot of the recipes - and your photos really motivated me! I am back to simpler eating now since I have left my cold weather home for a warmer clime for a couple of months. I don't have Alissa's book here, so am just using recipes I can find online. Thanks again, for what you have done for me personally. And, BTW, I'm so glad you're a Sticky, because the info was just too good to get buried!

i have a to-go menu for the new grezzo, and there's a section of the menu with herbal elixirs - i'm going to guess it's the various elixirs they add (i.e. kava kava, hawthorne, ashwagunda, etc.)

You guys!!! I'm STILL enjoying my food from GREZZO!!!! I re-froze the Icecream, Cheescake, and Cheese... The rest I'm eating one meal at a time!! I have enough food to last me another day or two...maybe even THREE!!! It feels so good not to have to un-cook anything for the week cuz I got so much food when I saw Alissa!!!

I'm making Flax Crackers right now. That's one of the things that stood out to me in the beginning of my visit, Alissa gave me a sample of hers and I just fell in LOVE with them. She makes hers a LOT thinner than mine and they tasted SOOO GOOD!!! So, I made mine super thin tonight and I can't wait to have them with the cheese tomorrow!!!

Of course, the Pizzas were the first to go!!! They were SOOOOO GOOD!!! I'm soaking some flax crackers and Buckwheat and I'm gonna make the Pizza Bread that Alissa gave me with the Eggplant Bacon Wrap. I think by far that was the BEST meal!!! And, the Cookie is da BOMB!!!! OMGOSH, it's INCREDIBLE YAU'LL !!!!!

If you haven't been to Grezzo yet and you have an opportunity, you MUST go!!!! The prices are very reasonable and the food is TERRIFIC!!!! The food was worth every penny I spent...I'd TOTALLY do it again!!! I can't say enough about it! And, of course, I loved spending time with Alissa! She was so down to earth and genuine!!! It feels good that our Mentor is such a wonderful person, inside and out. :)

Please let us know how long those things are keeping in your fridge! That's the one question I have about all of these recipes - how long can we keep them before they go bad? I know it's different for everything, but some guidelines would be great!

Well, most RAW meals with nuts can last from 3-4 days...up to about a week...(like Pate's...) What I did was, when I got home, I put most of what I brought in the Freezer and just put it in the Dehydrator a few hours before I wanted to eat them. That seemed to work well. Some things I kept out, though... but the Icecream, Cheese, and CheeseCakes were re-frozen easily. The Pizza's didn't even stand a chance in the Frig!!!!! LOL!!!! The Burgers I had 2 days later and they were SOOOO GOOODD!!! The only thing I wish was that all of the Sauces and Guac were placed on the side so that I could warm it up separately, but I'm happy with my whole package from Grezzo!!!

I told you I have you and Alissa as my wallpaper (background) on my computer!
I LOVE IT!
Makes my heart smile!

WOWWWW!!!! What a TREMENDOUS HONOR!!!! (blush, blush....) THANK YOU!!!! That is SO COOL!!!! Meeting ALISSA was one experience I'll never forget!!! As I told her, I'm DEFINITELY planning another trip to see her!!! I wanna bring my Hubby and Kids, who are STILL mad at me for not taking them!!! LOL!!!

==================

Ever Since I got back from meeting Alissa, I could NOT get her Flax Crackers off of my mind!!!! So, I MADE THEM the way that SHE makes them...SUPER THIN!!!!

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/FlaxCrackers001.jpg

AND HERE IT IS FROM THE SIDE:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/FlaxCrackers002.jpg

AND, ***NOW*** I know What Alissa means when she says that the "goo" will hold it together!!! It's SO much better this WAY!!!! Thanks Alissa!!!

I also could NOT get Alissa's Pizza and her Eggplant Bacon Sandwich out of my mind!!! So, I made her Pizza Bread for them both:

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/AuntLynnVisitPhotos022.jpg

It turned out SOOOO MUCH BETTER this time!!!! Just talking with her and the tips Alissa gave me for them made a HUGE difference!!!!

I also could not get her GRANOLA out of my head!!!! So, I also made the Granola in Alissa's book!!!

http://i517.photobucket.com/albums/u336/Pioneerspiritnee/AuntLynnVisitPhotos021.jpg

I must say, this SCARED me at first!!!!! It looks NOTHING like the one at Grezzo!!! The ingredients are very different... But, when it was done dehydrating, it's actually REALLLY GOOD!!! I wish that it was a bit sweeter, so next time I will add more fruit to it. The Granola that Lea made at Grezzo is 100X's BETTER, mind you... But, the one in Alissa's book holds it's own well!!! (I also added Raisons to mine...)

Alissa...please consider shipping the Granola too!!! I'd buy a TON of it!!!! (SMILE)

Oh yeah baby! I love making my crackers thin...they are crunchier. I am so loving un-cooking right now. It's been over a year! Where I was renting I had all my "stuff" put away so the hardwood floors could be re-done. Then moving the HFS - way too busy, too tired to un-cook, then me moving. Now I'm loving this.
People laugh at me for taking pics of my Raw food goodnesses, but to me they are works of art.

OOOHHHH, I forgot to mention what Alissa showed me about her Eggplant Bacon!!! Hers is SUPER THINNER than mine!!! And has 10X's the flavor!!! So, she said to use a Veggie Peeler instead of the Mandolin to peel the Eggplant!!!! She goes all around the Eggplant with the Peeler and it is marinated like that!!! I bought 2 of them and will have them dehydrated by the evening!!!!

Here's Alissa's Again:

Thank you! Yes, You MUST!!! I'm telling you, the food is out of this world, but meeting Alissa was such a pleasure!!! She made me feel right at home!!! She's such a sweet person and you can feel the warmth of the place just being there!!!

Hey, Renee, thanks for the tips! I think I need to make my crackers thinner! I'm going to try the eggplant bacon with a peeler, but not until I finish Alissa's book!

Great pics!

I've ONLY made it with a peeler. Have have folks made it other ways?

VFL: I've always used my mandoline. Makes it pretty thin, but the peeler may be thinner.

I confess, I simply sliced my eggplant with my little veggie knife! I guess it was pretty thick.... :D

I can't make any bacon until I finish all the recipes in Alissa's book, so could someone try this experiment:

Make some slices with a mandoline and some with a peeler and let us know the result. Which is thinner?

Annie - who will be missing that bacon. Gotta hurry up and finish Alissa's recipes!

Hey Annie!

Page 2 of THIS THREAD shows the thick slices of the Eggplant Bacon in my Dehydrator. I used a Mandolin for those. Also, see page 4 and page 6...there are several pictures of mine there. Page 12 shows Alissa's Bacon from GREZZO sliced with a veggie peeler. I made mine her way and it's SOOO GOOD!!! Actually, it's great both ways, but I got more slices her way...but, it was gone just as fast!!!! LOL!!!

Hers turned out a lot thicker than mine and was WAAAY Stronger in flavor. But, I use the recipe here on RFT from Cherie (RAWkinlocs) that uses Ume Plum Vinegar. Both are FABULOUS!!!

In the past, I usually used a Mandolin. I made some tonight and I used a Veggie Peeler and went all around the Eggplant like they do at Grezzo. I think I like mine better that way...plus you get more! But, I don't like the seed parts...but I didn't like that part with the Mandolin either...

I made a funny vid about this eggplant topic. I cant get it to load. Anyway I liked the thicker better. I was sooo yummy. The thin was crispy like with not much taste but the thick was super! You would love the vid. oh well.

Sorry for replying so late...got my foot X-Rayed today...sprain still hurts!!! Then, had a death in family!!! (my 94 yr old Aunt). So, been pretty busy...

I did make Cornbleet's Walnut Pate for my Mom today. She noticed I am losing more weight, which made me feel good... :)

As for peeling the Eggplant well, when you peel the Eggplant all the way around, just keep peeling the insides the same way until u get to the center seeds. I don't like that part, so I toss um...

OH yea BABY!!! It's as good as it looks all right!!!

The dressing was not in Alissa's book, so I called Grezzo and her "head chef" walked me through it. All the people that work for Alissa are really GREAT! I appreciated that she took the time to walk me through it...she could have just let someone else give me the ingredients, but she didn't. She took the time to speak with me which was Great! Next on my to do list is to make Alissa's Chili!!! I can just taste it!!!! (licking my lips...)

I just popped in for a second to say goodbye to everyone who supported me here. I don't want to leave with bad feelings...that's not me. But I don't feel like this is the place for me anymore. Those who know me know why. I just didn't want to leave without saying goodbye. I wish you all the best in your RAW journeys... I WILL ABSOLUTELY stay Raw. I appreciate Alissa and what this site has meant to me the last two years, but I feel like the "spirit" here has changed, so it's time for me to move on. If you'd like to keep in touch, I'd love that!!! Just email me at: PioneerSpiritNee@yahoo.com .....(HUGS to all of you....)

Hey EVERYONE!!!! :)

Well, I'm BAAACCCKKKKKK!!!!!!

Alissa has sent me the most beautiful e-mails!!! Truly, our Mentor is something SPECIAL!!! She has a BIG HEART and a TREMENDOUS SPIRIT!!!!

We spoke about some of the things that have been going on with the forum recently...(Don't worry, I ***WONT*** go into that again!!! ;)) Anyway, she has helped me to get passed all of that now and I'm in the process of putting my photos back were they were. When people are hurt, they do things that seems to make since at the time, but in reality are acting through the hurt feelings. I think that's what happened in my case. I regret so much taking the photos off the site...but, I still have them and all I need to do is put them back. It'll take me a while, so bear with me...there are over 100 photos of food!!!!

For me, it's all about the FOOD. It's all about ENCOURAGING one another to Stay RAW!!! That's why I started coming here and that's why I decided to come back.

I want to thank all of you who e-mailed me!!!! It feels so good to know that I encouraged so many here!!! What a blessing for me to touch your lives in that way!!! That must be what Alissa feels everytime she helps someone!!!

I also want to apologize to all of you for my part in the craziness. I missed you guys so much the last couple of days!!!! So, please let's all forgive one another and get back to the REAL REASON we all all here....RAW AND LIVING FOOD!!!!

((((HUGS)))))

Anyway, just thought I'd (finally) say hello, thank you for all your posts, and I'm really glad you're back too!

Your hard work and energy truly shows through your posts, and I'm sure all the love you put into your creations makes them taste 1000 times better!;)
