View Full Version : Ms. Jozzie's Famous Lemon Poppyseed Cake (with photo attached)

CAKE INGREDIENTS
1 1/2 c grated Jicama*
1 Granny Smith apple peeled & ground
2 cup almonds soaked/dehydrated, ground fine
4 T golden flax, ground fine
1/4 c agave
1 tsp vanilla
lemon juice and zest of 1 lemon
1/2 c poppy seed
*If the jicama is too ‘juicy’, squeeze the liquid out by hands*

FROSTING INGREDIENTS & INSTRUCTIONS
1/ Beat/whip 1 cup Omega Nutrition coconut oil (does not smell/taste coconutty).
2/ Add 1/4 cup agave
3/ Add juice of 1/2 - 1 lemon and/or zest, and whip again.
Note: Spread quickly as it starts to melt a little.
4/ Sprinkle poppy seeds on sides or designs if you make a different shape.
5/ Top with lemon zest curls or slices.
6/ Place in refrigerator for an hour or so. Serve at room temperature.

Sounds wonderful. However I can't find jicama in the UK. Is there a substitute I could use instead.

Cake sounds yummy, but your photo isn't showing up.

I would say to use something like mooli or daikon radish, with some crisp apple mixed in... That's going to be the closest. Or perhaps some sweet potato, peeled?

I just made this today. Yummy!!!:p

The Jicama I bought was moldy, so I substituted with another apple. SO basically, I simply used 2 Apples in this recipe and is still turned out great.
I did drain both of the ground apple mush through a strainer to get some of the excess moisture out.

It's such a nice treat! Thanks Joz!
