hello all!

I am so proud of myself right now!

Today I had my very FIRST raw coconut! And I must say..I loved it. We bought two a week or so ago, and tonight we finally cracked them open..which was almost as much fun as eating it.

I blended up some of the meat with the milk, diced up the rest along with a nice chopped apple, mixed it all in a bowl and VOILA! Absolutely delicious!

I have been having simple meals for the past month, so this was a nice little treat. I love that it's still simple, but seems so decadent.

Has anyone else tried raw coconut with fruit? What else would be delicious? I only used half (5 oz) of the meat, so I've got lots left for tomorrow...

How would frozen banana chopped be with?

Oh! thank you both!

I have about 20 pounds of frozen banana....so I think I know what I'll be making haha

The recipes look interesting, but I personally don't like to put so many ingredients in one thing. I'd gladly eat eat all that goes into the recipe..but if I could separate them all into their own little bowl spread out in front of me haha It's a mental thing for me.

I'm just nibblining a piece of a majure coconut by itself, crunchy :-) Sometimes. I make a smoothi with coconut meat, coconut liquit and mango.
