found this in a magazine....

1 English Cucumber
1 Tablespoon Apple Cider Vinegar
2 teaspoons honey
2 teaspoons chopped fresh dill
celtic sea salt (coarse)

1. Cut cumber crosswise into 3 equal pieces. Cut each piece lengthwise into eighthts.

2. In a large bowl, whisk together vinegar, honey, dill and 1 teaspoon salt. Add cucumber spears; toss to coat. Serve or let stand at room temp up to an hour.

Please do!! I can't wait to see how they turn out. Can't try it here out of cucumbers today.

I just made a similar recipe but with garlic cloves and without the vinagar or honey. Everyone in my family LOVES them!!!

That was my first batch of pickles I've ever made! Feels SO GOOD to eat and know it's healthy.
