Substitute for Beans? (it's a texture thing...)

When vegan I lived on beans...never met a bean I didn't like. Flavor, texture, you name it, I loved it!

Does anyone have suggestions for "raw beans" as far as texture goes? I don't know what treasures are in Alissa's book yet (should be here tomorrow :D), or what creative folks have discovered.....but the no bean thing is drivin' me nuts :)

Perhaps the longer raw the better this will get...
