I want to dehydrate tomatoes to store for the long term -either in fridge or freezer I have no preference - I just have an abundance of tomatoes right now!
should I just do them plain?? or marinate with what? fridge or freezer??
what do you all do to preserve tomatoes??? I usually only have enough to do what I will eat in a day or so - so I have not thought about how they will keep???

I have dehydrated lots and lots of tomatoes over the years. This is how I do them: cut into about 1/2 inch slices, put on your dehydrator screens and dehydrate. I then put them into ziplock bags and they are good until the next season of tomatoes come on. (I've even enjoyed them beyond a year) I just keep them on a shelf in my pantry. I snack on them plain, crunch them on top of my salad but most of all I make marinara sauce throughout the year with them. Good Luck!

My dehydrator is filled right now with the slices!! I am so looking forward to when they all come out - so just put them on the pantry shelf and they are good!! wow, well that is easy! thx
Since all my dehydrated tomatoes so far are from little tomatoes (which I cut in half) - I store them in sealed glass quart canning jars and leave them on our basement shelves.
Larger things - like fruit slices (apples, Asian pears, etc) I like putting in the zipper ziploc bags too and put on basement/pantry shelves. *Ü*

I dehydrate lots of in season and on special tomatoes. I do them several ways.
I semi dry them and put them in olive oil with basil and garlic (make sure to totally cover the tomatoes with the oil to avoid oxidisation).
I also completely dry them and place them in glass jars. I used to store them at room temp on the shelf but the weevils somehow got into them and ruined a whole season! I now keep them in the fridge or freezer, depending on whereI have the most room (usually the fridge).
If you do store them in bags or jars at room temp, make sure you thoroughly dry them first. Any moisture will attract mould and mildew.

thanks everyone - I have a whole huge bag of dried tomatoes!!!!!! they look yummy too!!
so what is your favorite thing to do with them???

Soak em a little then blend em up as sauce with a bit of garlic, basil and a date.
Put it on burgers, salad, sandwiches, in dips, eat with chips, etc. :D
