I decided to just fix a raw meal for my whole family tonight. In fact I plan to do that once a week from now on, so I at least get a little break from making two meals on a regular basis. So tonight it was Alissa's Pad Thai. Never made it before and finally got the ingredients today, or so I thought. Forgot that it called for almond butter, which I didn't have and was out of almonds too, so I used some sunflower seeds I already had soaking, and a few brazil nuts. I cut back a little bit on the ginger so it would not be too strong. The verdict was....

All three of my girls loved it, including my little 8yo.
Neither of my boys were crazy about it, said it was OK.
My husband really liked it.
I LOVED IT!
Seriously, if you haven't tried it, do so. It is very quick and easy to make. I didn't have the mung beans on hand either but bet that adds a lot.

Ok, now Pad Thai is one of those things I REALLY like in non-raw form, so that makes me afraid to try it in it's RAW form. But maybe with your rave reviews I might be willing to give it a shot. I might just pick up the ingredients tomorrow. Do you think leftovers will carry over well.

Blessings,
Heather

Leftovers....not so much. The batch which was delicious last night had a funny aftertaste today. Can't say why. It didn't make me sick, but I will throw the rest out.

I've always meant to try Alissa's pad thai...sounds like a good one. Love hearing nice reviews! My favorite raw pad thai recipe is in Cafe Gratitude's "I am Grateful" book. Gorgeous, classy and delicicious recipe. Love it!! :)

how funny, I've always wanted to try Alissa's Pad Thai until I tried cooked Pad Thai and did not care for it at all--too sweet!
glad to hear it was a hit!

Thanks so much for adding this ... I will be careful not to make too much. I have hubby picking up mung bean sprouts at the asian market tomorrow.

Blessings,
Heather
