Is it safe to eat the skin or only the beans inside ?

Do you mean edamame? If so, it's not safe to eat any part of it raw.

Yes, I meant edamame. So I can't even eat the beans inside raw? How can you eat it safely?
some legumes are toxic unless cooked. soy (edamame), kidney beans.

You can by would you? Beans are very hard to digest, except when sprouted.
Blanched foods have been heated, thus destroying enzymes...thus making it hard(er) to digest...thus making your body use ITS enzymes...
But you can eat anything you want. There are no Raw food police!

thanks, I really do have to read up on the enzyme thing. Some eminent biochem peeps have said it's complete bunkum. It's all bound up in the different standpoints to what the healthiest food is I guess. I'm not one way or the other as I don't have a clue. Got some reading to do...:)

You don't have to do much reading at all to understand that cooking destroys foods enzymes. Enzymes help one digest food. When you eat Raw food (fruits, nuts, seeds, sprouts, veggies) these foods come complete w/their enzymes so you dont't have to tap into your body's supply and your body can use its enzymes for healing. Simple.

Is the preservation of the enzymes in food the greatest thing to strive for?Aren't there other factors which contribute to the health value of a diet to consider? Also humans have digestive enzymes themselves to aid digestion.
