So has anyone heard of raw icecream with cocoa butter?
I'm going to experiment and see how well it turns into ice cream. advice?

I almost always use coconut oil and young coconut meat in my raw ice cream and it turns out great!

Hi revdrcyn ~ Would you share your recipe(s)? I've never made raw ice cream except for frozen bananas and other frozen fruits through the Champion juicer with the blank plate. *Ü*

Hi Deb,
I make this recipe practically every week – from Matthew Kenney Everyday Raw:
Cherry Chip Ice Cream
1 cup cashews, soaked 1 to 2 hours
1/2 cup young coconut meat
1/2 cup agave
1-1/4 cups water
1/4 vanilla bean (I use the entire bean)
Pinch sea salt
1/2 cup coconut oil
1/2 cup plus 2 Tbs frozen cherries, thawed and chopped (Note: I use fresh when available and dried cherries at other times. I have not tried frozen.)
1/2 cup “Chocolate Pieces” – this is another recipe -- I just use cacao nibs – I have even forgotten to put them in, and it’s fine without.
Blend all ingredients EXCEPT 2 Tbs cherries and Cacao Nibs in Vita-Mix until very smooth. Stir in reserved cherries and cacao nibs. Pour into Ice Cream Maker and follow manufacturer instructions. Yield 1 quart.
My Cuisinart ice cream make usually takes about 25 to 30 minutes.
Also, Veganforlifehas an amazing recipe I made yesterday. I did not have coconut powder, so I added about 2 Tbs coconut oil and about 1/3 cup young coconut meat. It is DELICIOUS!
I cannot find the thread, but here’s the recipe VFL sent – hope it’s okay to share here:
Raw Chocolate Chocolate Chip Ice Dream
2.5 cups of filtered water
3 handfuls of cashews - maybe 1.5 - 2 cups?
2 tablespoons raw cacao powder
2 tablespoons Alissa's coconut powder
10-12 medjool dates
1/2 - 3/4 cup of cacao nibs
Squirt of agave nectar
Put everything EXCEPT the cacao nibs into a high-speed blender (like a Vitamix-Mix) and blend until creamy. It will be thick.
Put into ice cream machine, adding the cacao nibs and use the ice cream maker as directed.
At first it's like a soft-serve ice cream, but this freezes well. It is YUM-OH!!!

I don't know why I haven't tried raw ice cream. I think it's time to toss the Cuisinart tub in the freezer and make one of these. That was so kind of you to post them, I appreciate it! *Ü*

I have made ice cream with the nuts and find it more grainy then I like for ice cream.
I mixed a concoction of melted/ softened coco butter and coconut oil and coconut milk. I have set it in the fridge to chill and am just waiting for my machine to freeze so I can make it. I added vanilla and agave. I will let you know how it turns out. so far it taste like it has the texture of real lice cream with a hint of coconut and the slight waxy taste of coco butter.

For me, soaking the nuts overnight makes a huge difference between it being grainy or smooth.

I made it twice... second time i soaked them overnight and it was smoother but still grainy. However i didn't use coconut meat.

I had asked this once before...Where can you buy the coconut powder?
Also Theobroma...I blend mine in a Blendtec & it comes out very smooth!

Try this: Use the soaked nuts to make nut milk - reserve the pulp for another recipe and just use the nut milk in your Ice Cream recipe -- a lot of the ice cream recipes I see do it this way to help with the "grainy" texture :cool:

Oh man thank you! I don't know why I didn't think of that. Normally I'm so on top of those little kitchen ideas! I will try it next time!
