Hi, my mom keeps giving me beets from her garden and I'm running out of ideas. I've been putting them in smoothies, thus making my green smoothies quite red, and I've been grating them into coleslaw.
I'd like to find a raw version of making pickled beets. Has anyone done this?
And any other beet ideas would be welcome too!

Grate them, use some Apple Cider Vinegar, some sweetner and oil. Next year she might not want to plant the whole pack of seeds. You can also use the small slips in salads. That is before the Beet Forms.

Juice them and freeze the juice to use this winter in smoothies...
Also, they make awesome noodles. Take your spiral noodle maker, and use them, oranges, celery and you got a cool salad!

It seems like a lot of work, but how about slicing, drying, then grinding to powder and using as a salad shake or seasoning, or place in capsules as a supplement for when you are on the go.

RAWsome idea! The powder also adds color to various dishes!
i make fermented beet pickles in The Perfect Pickler jar i have. they keep in the fridge forever and are so delicious! good for you too.
