Just discovered this recipe in the Veg News newsletter. It sound yummy. Actually, it looks good too but I couldn't figure out how to get the picture into the post.

Recipe: Raw Strawberry Soft Serve
1-1/4 pounds fresh strawberries, hulled
1 cup young coconut water
1/2 cup raw cashews or cashew pieces
3/4 organic pitted honey dates

1. Run the strawberries through a juicer to make 2 cups of juice.

2. Combine the coconut water and cashews in a blender and process on high for at least one minute or until silky smooth. Gradually add the strawberry juice and dates and blend until smooth. Place the blender in the freezer for 40 minutes to 1 hour or in the refrigerator for a minimum of 1 hour or up to overnight.

3. Once the mixture is well-chilled, pour into an ice cream maker and freeze according to the manufacturer's instructions. Serve immediately or transfer to an airtight container and store in the freezer until ready to serve.

I just made a cashew ice cream last night and although it was good, I found that it probably needed a pinch of salt, so today, I am going to try this one and see how it comes out. I finally found a use for my ice cream maker. WooHoo - I am trying to load our fridge with ice cream treats so that we can be covered in all areas - I am also making cookies today to complete the pantry - I am having so much fun.

Can you share the website?

Oh pleeeaaasse share the recipe for the cashew ice cream. I ain't too proud to beg... :rolleyes:

Cashews are by far one of my favorite nuts. I make my nut milk with them.(Not raw at the moment and without added salt-- not raw only because they are in the budget.)

I believe cashew ice cream would put me over the edge of bliss! :D
