View Full Version : Walnut-Miso Noodle Recipe

Here is what we enjoyed tonight:

I spiralized zucchini noodles instead of using cooked whole wheat noodles that the recipe called for. Since I didn't have enough zucchini I used Daikon Radish to make more noodles. I put that in a casserole, layered on the sliced asparagus, some diced onion, some finely sliced kale, and put it in the D for awhile to warm.

When I was ready to serve, I made the sauce. For those who use miso, fine. For those who don't, substitute Nama Shoyu. For the toasted walnuts I used some that I had previously soaked and dehydrated so they were hopefully a little like toasted. I'm sure that raw walnuts would work as well. Most of these things can be adapted to Raw. I put the sauce through a cycle in the KTec and it came out a little warm. Drizzled over the warmish casserole, sprinkled a few chopped asparagus tops and walnuts on top, and enjoyed.

DH and I loved this. It wouldn't have to be warmed, but it was mighty comforting during our massive thunderstorm here tonight.

thanks a bunch! I'm always looking for fun tasty recipes to try. I'm going to be trying the miso salad tonight. ;)
