Herb Dressing
Pieces of zucchini
Olive oil
Lemon
Garlic
Dill or basil
Salt
Brazil Nut Milk
1 part Brazil nuts
3 parts water
Optional: vanilla bean, honey or agave to taste, pinch of salt
Cannelloni
3 zucchinis (as straight as possible)
Brazil nut pulp (from Brazil Nut Milk recipe)
Olive oil, salt, lemon to taste
Fresh herbs of your choosing
Instructions
1/ For the Brazil nut milk, first soak the Brazil nuts for 14 hours, then rinse. Blend the ingredients fully, then strain with a nut milk bag. Set aside the pulp for the cannelloni recipe. (You can use the milk for something else.)
2/ For the outside of the cannellonis, use a mandolin to slice the zucchini as thinly as possible. Put the strips on a plate, overlapping one another a bit.
3/ Put the remaining cannelloni ingredients together in a bowl, making sure everything is well chopped.
4/ Fill the cannelloni centers only, then wrap the filling using the rest of the sliced zucchini.
5/ Blend the dressing ingredients, adding the herbs last.
6/ Cover the cannellonis with the dressing.
7/ Enjoy!
