View Full Version : uses for tomatoes that aren't that flavorful?

A friend gave me a huge bag of tomatoes a few weeks back from his garden. They were quite mealy and on the bland side - I have been trying to use them up though - just on salads, etc.

He just gave me another bag - same thing..not very flavorful. I really want to make some sauce or soup or something to freeze because there are so many - I just know that since they aren't that great - it might just all be bleh

any suggestions for stuff I can make that doesn't need a super yum sweet tomato??

Do you have a dehydrator? Drying them should intensify the flavour somewhat, then you can use them in many recipes.

Salsa might be a good thing to try, especially if you add lots of other things like onions, cumin, etc..

Basically any recipe where the tomatoes are a part of, but not the star of the recipe.

Tomato Slices
Tomato, sliced
Onion
Lemon or Lime juice
Dash salt
or
Tomato sliced
Cayenne powder
Dash salt
Optional: Kelp or Curry powder

Pretty much you can use them in anything, just add extra flavoring.

I was also going to suggest dehydrating them. I use Alissa's recipe for marinara sauce and the dehydrated tomatoes in the recipe wouldn't need to be flavorful - they're basically the thickener. *Ü*

If they are large enough you could scoop them out and put some stuffing in them!

All of my Romas from the garden this year are really mealy and not at all flavorful. I've been dehydrating them to use in place of sun-drieds. They work beautifully for that purpose.

You could make salsa then add flax and maybe some sunflower seeds and make them into crackers.

I hadn't thought of that. Great idea, dehydrating them for in place of sun-dried. Also wanted to say, I used to live in Smyrna, DE!!

thanks so much!!!! I do think I will do a mix of everything you all have mentioned - I have probably 75 tomatoes half are Roma's - which are definitely the more mealy of the 2!!

At the end of summers a local market here sells 60 lbs of tomatoes for like $15 or something, they are tasteless but I dried them all and then have dried tomatoes to thicken tomato sauces for like 6 months after. Drying them does increase the taste plus I blend them with good tasting fresh tomatoes so I still get good tomato sauce out of them.

My Romas are not mealy, but they don't taste super good like home grown tomatoes should. They taste like what you can buy at the store.
