View Full Version : dehydrating potatoes

I sliced up a couple of potatoes yesterday and popped them into the dehydrator with salt and pepper overnight. This morning when I went to go check on them, they were turning black. At first I thought it was mould, but upon closer inspection, it's not ontop of the chips but inside. What is causing this? Are they still ok to eat?

That's called oxidation. I wouldn't eat 'em. Actually, I don't eat raw/dehydrated potatoes. I think if you do the search, you "may" find recipes from some who have dehydrated potatoes successfully.

In my mind I remember that one time I rinsed the sliced potatoes really well after slicing them and they didn't seem to have as much of a problem.....the problem for me is the taste. They just aren't good.....I've never done it since. Now, I have dehydrated yams/sweet potatoes and added seasoning to them and they are REALLY good.

Popping in to share that sweet potatoes are GREAT dehydrated. Looks like jacsam beat me to it! But seriously, they're yummy. I wouldn't eat white potatoes, though.
