I'm getting really good at soaking nuts (the hard part is remembering to do it ahead of time).

My question is, what is the best way to DRY them after soaking?

Should I put them in the dehydrator, and if so, how long?

I tried to make Cinnamon Rolls using soaked almonds, and the consistency was horrible - the processed almonds were really soggy. I "repurposed" the whole mixture and turned it into a carrot cake (still kinda gross).

Thanks for your advice!

Dry them in the Dehydrator. I grind the Almonds and make a Dry Meal or if you make Almond Milk then dry the left over Fiber as Meal.

As for how long to dry them - I don't mean to sound flip, but I dry them until theyre dried out all the way through. I just keep testing them (eating one) until they're dry.

I keep a 'stash' of soaked & dehydrated nuts and seeds in my fridge so they're all ready to go for recipes. *Ü*

Great ideas - I will implement immediately. Am taking yucky carrot cake to a meeting -- my colleagues and staff will eat anything

If you have a low humid sunny place, you could put them on a mesh like tray & dry them in the sun..keep the animals away

If you have leftover carrot cake try shaping it into cookies or bars and drying those. I've also salvaged a few concoctions by putting the whole mess in the food processor or VitaMix (add liquid if necessary), whip it until smooth, then spread it out on paraflex sheets and dry it like fruit leather. I was surprised how good that worked.
