Workshop in New Zealand

Just after some ideas as I'm holding a raw food workshop in my Town, the South Island of New Zealand is very new to the raw food way of eating. I have have had 50 people book in for workshops since last Wednesday so I know there is a calling for people. What I'm wanting to know is how are workshops run in your county. I hoping for ideas, I am going along the lines of giving a run down on why I went raw, the benefits it's had for me and other people I've heard about and then prepare some dishes let people sample them and send them on there way with some recipes. But I'm open to suggestions because if this works I would love to take it to other towns as well.
Any ideas would be really really appreciated.
