View Full Version : Raw Madeira Sauce?

I just saw a recipe for this and it looked good:
mushrooms...shallots...garlic...flour...butter...a nd Madeira (a red wine)
I can make this raw, but can you use org. wine with mushrooms, etc. to make a sauce?

Hm, I think that one will require some experimentation. Cooked wine taste a lot different. And madeira sauce is as far I recall reduced for quite a while on the stove.
Perhaps you can get a similar result using a dehydrator but I'm not sure. And you probably need to thicken it somehow.

You could maybe marinate the mushrooms in wine, then dehydrate them awhile. Pecans would probably make a nice creamy sauce with them. You could blend up the mushrooms into a sauce with some water..
What do you plan to sauce with it? Would probably be good on top of even more mushrooms.

I don't have any pics. I just like to store up ideas so I can use them when entertaining omnivores for the future. Using the marinated sauce on large portobello mushrooms would be great--like raw vegan steak! Thanks for replies!
