View Full Version : Cold Cucumber Noodles with Sesame sauce

Fell into this a few weeks ago and can't get enough of it :) Use a spiralizer on a seedless cucumber and i use raw food for 1 or 2 people's recipe for Almost Peanut sauce. I spice it up a little and it's fantastic :D Between this and my avocado , mango , red onion salad i have been pretty happy these days ;)
Been trying to convert more to raw from veg .

Do you let it marinate awhile? This sounds delicious--and the noodles tender..Thanks for the idea=)

No . I also tried to salt the cucumbers to reduce water. I didn;t notice much of a difference from the unsalted ones. The best i think is to use seedless or English cucumbers and put the sauce right on top and mix with a fork. I eat it right away ;) I also put scallions and some sesame seeds on it as well .

Love cucumber noodles in an almond butter sauce very similiar to the Almost Peanut sauce. Especially in hot weather. I added some kelp noodles to it last time. It was even better the next day. :)
