Well having finally found a place to purchase lucuma, I finally made Carmella's butterscotch shake. The first couple swallows were a little off but after that it was really good and tasted a little butterscotchy too. Although my son asked how that could be if it didn't have any butter or scotch in it. LOL

Dried apricots are also "butterscotchy", I have a book with a recipe for butterscotch pudding which is made from dried apricots, dates, a banana, almond butter and vanilla.

Is there any way to make this without using the young coconut meat? Can I substitute something in, or just leave it out?

I would just leave it out - or throw in some dried coconut for flavor. Thanks for bringing this thread up - I haven't made this in a long time.

I really need to find me some lucuma too! It's called for in so many recipes. I can't source it locally (rural Canada) but I need to bite the bullet and order online.

This sounds really good!! I bought some apricots yesterday, going to throw them in the "D" and make this.....Thanks!!

I think both health foods stores I go to sell Lucuma powder and I'm also in Canada, did you check a few health food stores? Often when ordering raw ingredients online you need to buy $200 worth to offset the shipping cost, otherwise you're buying $10 of lucuma and $20 or more to have it shipped, so I used to make $200 orders where the shipping was about $50 but less ridiculous than $20 to ship a $10 item.
