Oh the best rice I've had so far, it was just what I needed today. I processed cucumbers to the size of rice grains, then added salt and drained it through a metal mesh colander. The salt is to help draw out the liquid from the cucumber.
Of course, I drank the juice, too.
I added the bomb cheese sauce and it seriously was so like broccoli cheese rice to me. I can't wait to try other pilaf/casserole recipes with cucumber rice.
I ate half of it raw and the other half warmed up in the dehydrator for a couple of hours. Both are amazing--but the warmed one is very, very like macaroni and cheese or other cheesy casserole. Yum!

Just how did you process the cucumber? And did you peel it?

I didn't peel it, but it would be more white of course if you did. I cut it into rounds and pulsed it in the food processor.
I'm so grateful to have this now as it easily satifies any yummy warm craving I might have.

I will have to try this tomorrow. Cucumbers were three fo dallah and red peppers were only a buck, so I have all I need to make this. My daughter doesn't like the zucchini noodles so am trying to find something else to hold the sauce, lol.

today is so beautiful and i am so so so sleepy. Can't seem to wake up. but i feel pretty good. Maybe I'm detoxing something. I'm just gonna lay low today.
So far I've had a few blueberries, two apricots, and dipped into my jar of coconut butter mmmm
later on, i'm gonna do some salad big time.
my summer vacation in perfect portland oregon is almost over. I go back to new york city on saturday, and start school again soon thereafter. I'm sad. I'm gonna miss my brother and his partner and my baby nephew. And also all the free food growing all over the city and in people's amazing gardens. and the old growth forest, gonna miss that too.

Hey katchmoleen, thought this post from another thread might work for you ~
This cheese sauce is great with raw tacos. Just grind up some walnuts and add taco seasoning to taste. (I know its not raw, but I really wanted to try it and wanted it to taste like taco meat.) Next time I will try to use someones recipe for taco meat. Put "meat" in a "shell". The shell is a romaine leaf. Drizzle some cheese sauce on top. You may have to thin the cheese out a bit first. Then top with vine ripened fresh and juicy tomatoes from the garden. Tastes just like the tacos that I used to eat. I can say that because I have used romaine leaves as my shell for a while now and this is exactly how my tacos taste. My 7 yr olds and my 4 yr old ask for them. They even eat the tomatoes and supposedly they don't like tomatoes. Or so they say. Very quick and very easy. Try it you'll like it.

This sounds interesting! I think I'm going to try it tommorrow, maybe with just 1/2 a cuc and see how I like it. I have some cheese sauce already made. I've found that I really like the sauce dehydrated; it tastes to me like a cheese cracker. Sometimes I eat them with guacamole or salsa.

bought 2 cuc's and a red pepper yesterday. Will try this when I get home from work. Can it really be like broccoli rice casserole. Mmmmmm.

Just made this for dinner and it was really really good! My daughter liked it too, so now we have a new "sauce holder" for marinara etc.:D
This definitely is a keeper and will be a regular on our menu. Thanks Thick! How did you even think of using cucumbers? I never would have imagined it.

Laziness, the mother of invention=) I was planning on making cucumber noodles at some point this week--then the cheesiness craving hit and I thought it would be a lot like zucchini rice. I was so happy at how much I like the texture. And, I'm extra happy that you and our daughter liked it, too=)>

Hi Cathy ~ My husband doesn't eat nightshades either. I find he's happy when I substitute carrot for red pepper. Now, I haven't made the cheese sauce recipe - but I wanted to suggest it incase you think it might work out. *Ü*

Yes, you can. The bell pepper is mostly a means of making the cheese orange. =)

I made this a few nights ago. I added wayyy too much salt, but other than that, it was good.
