I tried the banana search and couldn't find any. Is there something worng with raw rhubarb? Or just not a huge interest?
I LOVE strawberry rhubarb pie, has anyone tried to make a raw version. Please share your rhubarb creation goodness!!!

Not really a recipe but I made a nice rhubarb strawberry pie for my daughter a couple of times. The crust was ground nuts with a little date mixed in it, the filling was rhubarb, strawberry and some sweetener - agave or honey. It was tasty but runny :)
you could firm it up a bit with powdered flax seeds or powdered psyllium. those are binders that work well in fruity pies.

Thx for all the links!! They look yuuuuuummy! I really like the first 2 links, and I also like bookish Lass's pie idea, adding some physillium to it will make it less watery, that's a great idea!
off to make some recipes tomorrow, my mouth is watering already. :)

Rhubarb pairs well with strawberries, so one is in luck with so many strawberries being around right now. Add a bit of sweetener like soaked dates or agave maybe if the mix is not sweet enough.
About the powdered thickeners like flax seed or psyllium, I wonder if ground-up to a powder chia seeds would work, since they gel up things pretty well.
chia are very similar to flax, i think the two are interchangable. i'd grind them both into powder first, that was no hard bits.

Unfortunately, Chia seeds and flax seeds don't agree with me. Will do some expermenting this wk though. And YES, rhubarb and strawberry go great together!
how about psyllium? grind it into powder and use in place of flax.
one thing... rhubarb LEAVES are absolutely toxic so don't anyone go eating none of those please!

I was also going to suggest thickening it up with psyllium, which someone else suggested....
But what no one else suggested that I find makes a delightfully rich pie, of any fruitty kind === much like SAD, but BETTER, is to smear your filling over a teflex sheet in the D for like four or five hours. Then scoop into your pie crust. Oh man, ooey gooey good.
I find if you spread it out on the teflex sheet, rather than putting the whole pie in the dehydrator, that it dries quicker. Some of the runny stuff even becomes chewy, depending how long you leave it there.
You could even puree some and make fruit leather too. .

GREAT idea! Tell me, how do I find raw phsyllium? I have only seen it in the medicine isle at the store.
And YES, the leaves are toxic, must stay away from those!

Ooooooh, now thats another great idea! How yummaliscious that sounds! Will give that a try soon too. Mmm, my mouth is watering just thinking about it. Do you have any favorites to share???;)

I wrote about it fairly recently in this section somewhere....Sorry no time to look up. Essentially though, you take about 1/3 of your fruit , puree it, sweeten it a little then add it to diced pieces of fruit. Dice the fruit a little smaller than you would for a cooked pie. For peach pie, I'll add a little sweetener and some cinnamon, with a pinch of nutmeg.....for apple pie, just cinnamon......
