A classic summer dish in my house, this recipe is great for those hot days when cooking is just not an option. For Diabetics, this salad is a good replacement when all you want is carbs, the vegetables help to take most of that away, but you can still enjoy some pasta. Try this one outside on a picnic or at a BBQ.....

Unfortunately, it contains cooked pasta, not exactly what we want when eating raw. Much better to make "zucchini pasta" and raw marinara sauce. That's a GREAT summer meal.

One thing that my wife noticed and requested is that I make my zucchini pasta the day before I use it. She noticed that when she took the left over pasta to work for lunch the day after I made it, the zucchini had the same exact consistency and texture as coked pasta. Where when you create the pasta fresh it is a bit on the crunchy side.

You're right, and if you season it on the first day, the seasonings marinate into it nicely.

That's a great idea, do you have any seasoning suggestions?
I could see how a garlic herb mix might kick up the pasta, but the best part of making the zucchini past for us is Alissa's marinara sauce, it is simply the best tasting marinara I have had. The best part is I can whip it up in 5 mins and it's RAW!!! My kids even like it :eek:

Pesto, or yes, Alissa's Marinara. It's great anyway, and even better after the flavours mellow together.
i make the zucchini pasta fresh, i figure it's got to be healthier that way before it oxidizes and loses nutrients. i salt and oil it and let is sit while making the sauce then rinse it in warm water and press out the liquid in a sieve right before serving. the texture changes and becomes softer that way too.

Oh my goodness, I never had pesto before going raw and it is just the most delicious thing. I eat it by the spoonfuls! Unfortunately my daughter does not like the zucchini pasta. I will have to try the marinated way and see if she likes it better that way.
