you know those times when you make an OUTSTANDING better-than-cooked raw meal, and it is really really really good, and you would not trade it in for anything in that moment? The food is so good, so tasty that it is difficult for your mind to accept that it is the healthiest food ever? Like almost to good to be true? You literally are creating new neuro-pathways in that moment, to believe it, to really believe you are eating what you want to eat because it tastes so good and it is natural. All the old thought patterns are freaking out!

I just made a rediculously tasty salad with macadamia cheeze. It tastes better than bovine vintage cheese. The cheeze is amazing, it look like cottage cheese, it tastes like vintage cheese, it is the creamiest ever, and I am in shock, because it is easy, relatively cheap, only three ingredients, and I feel sad for those who eat regular cheese. I had fun making it, I was stoked eating it! The simplest things can provide so much joy!

I had one of those moments today, three times!! The apple and 2 mandarins I ate were just amazing and after each one I thought "that's the best piece of fruit i've ever eaten!!"

Oh the Cheeze? It's easy.

I have a strong blender, blend a small packet of macadamias with the juice of a lemon and a pinch of seasalt. blend blend blend.

Thick and creamy and yum. I let it sit out in room temp for a while, the taste improves in about 3 hours. you could also put it in the dehydrator, I'm sure it will taste even better.

Yep, I agree, the fresh raw foods are awesome. The watermelon I just had for breakfast tasted so delicious and natural it was radiantly alive with flavor and resonated the joy of health & wellness.

Oh yes, all the time! Lately it's been my insane raw ice-cream combos since there's so much fruit in season right now. DH has his head in these every day, and neither of misses regular ice-cream at ALL - LOL! Too many other things to count, like various raw spreads, homemade raw granola, etc, and of course the supreme joy of just eating an amazingly ripe sweet peach - I swear it's mind-altering - LOL! I mean, why would anyone want to eat junk after doing this?

Alissa's book has one that I know of that just uses frozen bananas. I'm sure there are more in there, but I havn't really explored the dessert section yet.

About the ice-cream recipes, you can just leave out the coconut. Sometimes I just blend up the frozen bananas and some other fruit, with a bit of vanilla extract, depending on the fruit that I use along with the bananas. I change up my recipes depending on what I feel like doing that day!

I haven't made the cheezes because Macadamias are expensive. Can cheeze be made with any other nut?

I've made a cheese with sunflower seeds, garlic, a de-seeded red bell pepper, salt, lemon juice, and nama shoyu. The used to make it with cashews but tried it this way and it was just as good. You can use nutritional yeast if you want as well. This is good as it is, or sometimes I spread it on teflex sheets in the dehydrator for cheese crackers (or don't leave them in as long for a burrito wrapper), or I've used the mixture to scoop into peppers, and then dehydrated them for chille rellenos. You can add different spices, like maybe jalapeņos, cilantro, or cumin for Mexican, or basil and oregano and sun-dried tomatos for Italian.

Veganforlife, yes, I think! you mean in regards to letting it sit? something magical happens after a while.
