Hi all, I am up to my neck in mangos and do not have any fun recipe ideas for them. I do not mind eating them plain but I have LOTS! Any ideas or suggestions?
Thank you!

coco's suggestions are all good - here's another one - banana-mango ice-cream. Just blend up in the food processor or high-speed blender some cut up mango and 2-3x the amount of frozen banana chunks with a bit of lime juice to brighten up the flavor and you've got really yummy tropical-flavored "ice-cream" You can crush up a handful of raw cashews and coconut shreds first and then add the fruits to blend for a slightly richer mixture. Either way, this is is fab!

Similar to Cara4art's, I've made banana mango pudding with chia seeds in it for a really thick/rich treat.
Dried/dehydrated mangos are always good!
You lucky thing!

Some ground flax seeds (3 cups) a whole mango and a 2 teaspoons of Olive Oil make some awesome bread in the dehydrator. =D

Chopped mango and avocado, slices of red onion, drizzled with lime juice. Serve it as is or on a bed of greens.
Mango and almond milk blended with dates, vanilla, and cardamom or cinnamon and nutmeg.
Mango and greens in a smoothie
Chunks of frozen mango and cubes of frozen almond milk whizzed in the food processor until smooth.

:) Let me know how you like it. Tomato soup is also great, especially with sundried tomatoes added.

I LOVE IT!! I made it as directed and it was amazing.. then I added a few extra cloves of garlic to trick my mouth and tummy into thinking I was eating something warmer than room temperature.
I'm actually taking it to work tomorrow too. I'm going to have soup 'n salad!

Kit, so glad you enjoyed it. :) I love combining sweet and savory and those are 2 of my favorite foods. I hardly make it though because I'm always eating them on their own.
You can make a delicious Mango Pina Colada Smoothie, please visit my site and see how I make the recipe www.rawkitchenforthesoul.com or www.kitchenforthesoul.com

Oh man, I am jealous! We don't "happen" to have any of those here in Chicago. Sigh....

If I have an abundance of mangos and can't use them all fresh I peel and slice and then freeze...they are fantastic in green smoothies~

I went to a raw restaurant once and they served a sandwich (or maybe it was a wrap, I can't remember) with mango and avocado and I think sprouts or greens and some kind of raw mayo. I never would have thought avocado and mango would be good together but I loved it! Maybe you could used that Mediterranean almond bread and Almondaisse.
Other good suggestions on here that I'd like are mango lassi/smoothie, mango ice cream, mango cobbler, and dried mango.

I recently saw a post on this forum with a youtube link of this guy making an awesome beverage. He used a melon baller to scoop out the coconut meat. That is what the other post was about. Couldn't find it again but here is the drink he made.
meat of 3 young coconuts
juice of one young coconut
two mangos
put all into high speed blender and liquefy.

I don't know about you, but mangoes for me - in season, sun ripened, straight off the tree - are perfection, and you cannot improve on perfection.
So if I were you, I'd just sit there and eat them all, mono eating every day, until I was sick of it. I'd be a proper sow if I were you, a right little piglet!!!
Mangoes, yummmmmmmmmmmmmmmmm!!!!!!

My husband and my favorite recipe for mangos is Mango Cobbler from Ani Phyo's book Ani's Raw Food Kitchen. You could also make a raw ice cream with mangos, cashews, honey, etc.
A bowl of sliced mangoes, young coconut meat and fresh basil. Mmmm
Also...I agree with GlimR and Summer....Ani Phyo's cobbler is deeelicious! :D
