View Full Version : Raw PBJ with Mild and Soft Almond Bread

I wanted to make a milder version of Russell James' Mediterranean Almond Bread so my newly raw daughter could have her beloved PBJs at her Bible Camp next week. I just had one warm out of the dehydrator and it was so good, I want to share.

Mild and Soft Almond Bread

Makes 18 ’slices’

1/2c olive oil
1c dried sweet potato chips
3c almond pulp, leftover from making almond milk
1c flax meal
2 small zucchini and 2 small yellow squash, peeled and chopped
2 apples, cored and roughly chopped
3T lemon juice
1t salt

Combine everything except the flax meal in the food processor and process till smooth.
Put in a large bowl and stir in flax meal. Place back in processor, half of the batter at a time, and process till smooth.
Divide batter in half and place on two trays with teflex. Spread to cover the whole sheet, and score with a knife to make 9 slices on each sheet.
Dehydrate at 140 degrees for one hour, flip onto a mesh sheet, and continue dehydrating at 105 degrees for another 8 hours. It should still be soft.
Store in the freezer and remove slices as needed. They thaw very quickly.

Raw Peanut Butter

I know a lot of people say don't eat peanut butter, but it's what she wanted, so at least she has a raw organic version!

1 pound raw blanched organic peanuts.
2 teaspoons sea salt
1/4 cup coconut oil

Combine all in the food processor and process until creamy. It takes awhile so be patient.

Raw Blueberry Jam

1 pint blueberries
Stevia to taste (I used one dropperful of the liquid Stevia)

Process 1/2 cup of the blueberries with the stevia till smooth
Combine with the whole blueberries, stirring and slightly mashing them.

Spread your lovely soft bread with peanut butter and jam and enjoy! Wish I had a picture to share, maybe next time.

Thanks for the recipe. I tried the Mediterranean bread and found it to strong tasting. I will try you recipe this weekend.

Thanks for sharing. Could you just use sweet potatoes chopped up in the food processor, rather than the dried sweet potato chips?

Also, approx how thick do you pour it on the teflex sheets?

mmmm i don't think i'd add stevia since blueberries are plenty sweet enough for me but i want to make this bread. thanks!!!

Could you just use sweet potatoes chopped up in the food processor, rather than the dried sweet potato chips?

I also want to know this. Additionally, what purpose do the sweet potatoes have in the recipe? Could they be easily replaced with a cup of some other moist, fibery something?

James's recipe called for sun-dried tomatoes, non soaked (I assumed, since it didn't say to soak) so I just replaced it with something dry I had that was milder tasting. I'll bet the sweet potato could be left out all together, but it gave it a nice color! :)

As for the thickness, you divide the batter in half and spread it to the edges of the teflex sheet. I have the bigger Excalibur so I believe that is 14". It is about 1/4" when wet and dries thinner but still nice and soft.

interesting bread recipe!

i am curious about the "raw blanched" nuts though. raw is raw and blanched is not raw, am i missing something?

ok, i get it. i have dunked soaked almonds into hot water to help loosen the skin but never peanuts. i guess it's less papery if they are really raw.
