View Full Version : Cacao nibs, what can I make?

I just received my pound of cacao beans from my co-op and I have no idea what to do with them. Silly me thought they would be great raw by themselves but I was wrong. They are very bitter on their own. I love eating dark chocolate bars that are 88% chocolate but this is a whole other story!
So I need a simple recipe that I could use them in. I know I could toss some in my green smoothie but then I won't really taste them. I also know I could put them in a trail mix but I still think I'll taste the bitterness.
I was hoping maybe I could have a raw version of a chocolate bar? If not just something simple would be great.
Any ideas?

A kale smoothie...
large handful kale
strawberries
goji berries
cocoa nibs
bit of honey
bit of cayenne
bit of cinnamon
some water
delicious chocolatey strawberry goodness

Here is a simple favorite:
1/2 cup almond milk
1 frozen banana
1-2 T. cacao nibs
1-2 T. agave (or pitted dates)
1/4 vanilla beans (seeds only) or a few drops vanilla extract
Blend in high speed blender and enjoy immediately.
For an ice creme treat use frozen cubes of almond milk and blend all ingredients in a food processor.

Carob Fudge
Carob Powder (can turn the nibs into powder if need)
Cacao Nibs
Agave
Vanilla
Salt
Mix in bowl.
Cookie Dough
1 Tbs Tahini
1 Tbs Cacao Nibs
1 Tbs Agave
2½ Tsp Coconut oil
1 Vanilla drop
Stir in a bowl.
Mint Chip Ice Cream
Frozen Bananas
Agave ¼-½ tsp
Cacao nibs 1-2 Tbs
Mint extract, few drops (organic, alcohol-free)
Chocolate Shake
Frozen or fresh Bananas
2-4 Tbs Cacao
Agave
Water
Optional: Greens
Can also use in balls or bars.

What if one doesnt have a vitamix? How do you grind them fine enough...coffee grinder doesnt do it.

Before I had a Vita-mix I would grind them in a coffee/spice grinder. It worked pretty well. How about finishing it in a mortar and pestle...?
Chunky nibs are good, too!
