I wish everyone would stop believing ALL agave isn't raw. I would be dead now if it was really corn syrup.

Some of the confusion about agave nectar comes from its similarity to corn syrup. While it is technically raw (unheated) it is highly processed. As with corn syrup, the agave pulp is chemically treated with enzymes to split the fructose and glucose from the starchy pulp. One ends up with a high fructose liquid not that different from HFCS. Whether one wishes to use it or not is a personal choice. I do, but I don't delude myself that it is a whole food - its not. It's a condiment like raw soy sauce or nutritional yeast. It makes life a bit sweeter so long as one doesn't abuse it. Dates, however are a whole food sweetner (with the fiber intact) and can be used in place of agave nectar in most recipes.

Yes, I agree...it's easy to get it raw...but the real problem is that it is a high fructose syrup which is hard on your liver.
That said, I still use it...but not as freely as I used to. Maybe one day I will get to the point where I don't use it at all...but I'm sure not there yet.

Madhava is good, but my favorite is the clear agave from Ultimate, which is the brand Alissa carries in her store.

I agree about agave. If it were unhealthy, I wouldn't have been able to clear up many health issues.

I definitely feel better since I stopped eating agave. I love making raw chocolate cakes and am happy with my agave-less recipes. By brother-in law recently said it tasted like a savoury cake, but it tastes sweet to me. I think our taste buds get trained.

I prefer agave over stevia. Agave is the only one that seems to blend really well with foods. There seems to be only one type of raw stevia, which is hard to find. Stevia always has a taste or after-taste most don't like. Not sure if the raw one is the same. It's not a bad choice, but I'll stick to agave.
If anyone has had issues with agave, it's mostly likely because the brand they used wasn't truly raw. Though I'm sure, as with any food, there could be a small percentage of people it just doesn't work for. It even could be that one doesn't work, but another may, regardless of whether it's raw or not. This holds true for many foods.

Hi Cara ~ It really was a matter of personal taste for me. In the Madhava brand - I tried both and much preferred the light. It tasted 'lighter' to me - more like honey. The dark tasted much heavier.
I just ordered a case of dark Wholesome brand through Azure Standard and I like its flavor. I bought a small bottle at the grocery store and tested it out before I ordered a case. Plus, when I contacted A.Standard - they said the light was not raw, but the dark was - so I really wanted to try the dark (Wholesome brand).
So for me, the flavors varied brand to brand. *Ü*

I was at Whole Foods earlier, and I saw that they had both light and dark raw agave, and then raw blue agave - do you know anything about that and how different is it from the other kinds?
