I had a serious craving for thai food, so I experimented in the kitchen and ended up with a DELICIOUS meal. I made marinated portabello mushrooms, thai green curry with butternut squash rice and mango salad. So good, and I'm so proud of myself that I had to share!

For the thai green curry, I made a sauce with cilantro, coconut butter, sea salt, crushed chili peppers, ginger, a bit of cumin (I don’t think this is raw, though), lemongrass, a bit of honey, garlic and lime juice. I don’t exactly know how much of everything, because I just kept adding and tasting. Then I just pulsed butternut squash in the blender with a handful each of cilantro and basil to make the rice.
The mango salad was just sliced mango, sliced red pepper, cilantro, cashews, lime juice and sea salt on a lettuce leaf.
And the mushrooms were marinated in olive oil, garlic, lime juice and sea salt, and then sprinkled with sesame seeds. The mushrooms weren’t that great though…only so-so.

Next time try Marinating the Mushroom with Braggs or Nama Shoyu, Garlic, Green Onions and Olive Oil.
