Soaking Nuts and Seeds

When soaking your nuts and seeds, is the water supposed to change color? I'm soaking almonds for raw cheesecake and noticed the color is turning a slight bit brown.

Also, should nuts and seeds be soaked at room temp or in the refrigerator?

Yes, the water will change colors. And for taste and texture, you might want to consider peeling the almonds.

Nuts are fine being soaked at room temp.

And I've always heard/read that you do not want to use the soak water - and to rinse the nuts well after soaking. Enjoy! *Ü*
