View Full Version : Alissa's Blueberry Pie

I made this tonight and we all loved it! We don't understand how it works though, how does it thicken so well in the frig that it has the consistency of Jello? It's wonderful, and I will be making it often. I also wanted to ask if anyone knows if frozen blueberries will work as well for this recipe, since fresh blueberries are in season for such a short time.

Blueberries have a most wonderful gelatin texture. I don't know how it does it I love it. Its natures natural J-e-l-l-o

I made this for my potluck on Saturday and everyone LOVED it! It was so easy too! Great recipe!

Blueberries contain pectin. Some thing happened to a green smoothie I made with blueberries, it set up like pudding. Great in a pie, not so good in a smoothie.

Are there any leftovers? :)

Just change the name from Smoothie to Parfait:). I am a BLUEBERRY Lover also..

Ahhh. That explains why I had to almost slice my blueberry-banana-spinach smoothies last week with a knife before eating.

I couldn't figure out what was going on. :confused: Now I know.

Carrots, peaches, and apples have a ton of pectin too -- so something similar happens with those pies if you follow a similar procedure! It's actually isolated for jellies and such, but isn't it great that it's naturally occurring!?

I JUST made blueberry pie THREE times in the last week, finally perfected the recipe on the third go. I'm sending it out in my newsletter today.

I might just have to make it again, because I've already eaten or shared all of the pie so far!! haha

I too have used froozen and it still worked well....you can also let the blueberries thaw. I also like to just make the filling when I don't feel like a heavy nut crust. Great recipe.

I just made this. IT was soooo easy and sooooo good. I had two helpings. Would never have done that with cooked blueberry pie. I might even have it for breakfast tomorrow(since my family said its just not blueberry pie...) oh boo hoo you poor SAD eaters!!!!:D
