After countless dismal attempts to create what I think is a great tasting hummus I went to work and came up with this. I think it's as good as anything I have purchased in a store but not up to or as good as a restaurant. I will continue to work on it and post any changes I make to my blog.

Tell me please, how love did you sprout the chickpeas?
How often did you rinse them?

To be honest I sprout a lot of things, but I cheat. I never cared for the whole rinse in the morning and again in the evening, keep them covered, ect. It was simply more than I wanted to do:o.
I started researching Sprouting methods and tools and I came across the Fresh Life Sprouter (http://www.freshlifesprouter.com/main.asp). This device is simply amazing. I sprout my Chickpeas in 2 days (I like the tails short) while spouting alfalfa or Mung beans or Radish or just about any combination imaginable. Here is a picture of it in action (http://duaneepperly.spaces.live.com/blog/cns!486E62B391467F29!474.entry). I simply add in what I want sprouted, then I change the water once a day. I am taking the alfalfa out later today to make the Alissa's Mock tuna (Mung sprouts came out a few days back) for tomorrow.
It's one of the best gadgets I have in my kitchen.

I just got finished soaking wheat berries for my wheat grass, i will start my chickpeas tonight.

Try your recipe with zuucchini instead of the chickpeas. It will taste better and there is no difference in texture.

I use almonds or almond pulp because they are not as bitter as raw chickpeas and still make a thick dip. It makes a huge difference in flavour

I recently went to a restaurant and it was hard, but I did my best to stay as raw as possible. Obviously, salad was my first thought. But then I saw this ahi tuna with hummus and eggplant caponata app. I asked for it without the tuna and recreated the recipe at home.
Chop eggplant, sundried tomatoes and add olive oil, trace of sea salt, chopped garlic and let sit. Make a sprouted garlic hummus as a "starch". Serve the eggplant mixture over julienned zucchini. Yum!
There is an Italian restaurant in my area that will also accomodate a raw menu for you. You need to give them 3 days in advance so they can shop and prepare. How great is that??!! Why can't more places think of this?

That's pretty RAWsome.....I guess if we would put in a request early they ALL could or would try. You never know until you ask. I am going to a School Reunion and have never bothered asking for Vegeterian at the time. I would just pick around what was there.
Well this time I made a request for a Salad with everything RAW in it with a little Color etc. This is in the Batter it and Fry it South.
