Hi, I'm sure many of you gardeners have experienced having too much zucchini. I need some recipes to use it all, preferably dehydrated recipes so I can preserve it for later. Please no flax seed. Thanks.

You can freeze it and use it in blended things later.

Good to know - I think I'm going to have tons of Zucchini soon. I see tons of them growing and they are all about the same size, I'm going to have tons at once. I also saw some new flowers too, so more are starting.

I LOVE zucchini hummus. Lots of recipes out there on Google. I use zucchini, tahini, garlic, lemon juice, cumin and a dash of sea salt. Some people also add olive oil. I also like to make zucchini boats and stuff them with taco nut meat (walnuts, sunflower seeds, sun-dried tomatoes, taco seasoning). And, of course, the old stand-by of zucchini pasta. I tired making zuke chips last year once and I didn't like the results.
But, I have so much zucchini in the garden that I am trying Alissa's Italian Zucchini Chips right now. I will post and let you know how they turn out.
You simply marinate sliced zuke "chips" in Alissa's Italian dressing for an hour, and then dehydrate for 8-10 hours on 105 F.

in regards to stuff you can make.. you could just chop it up into chunks and dehydrate it & mix in some other stuff and make some soup for later.. the "other stuff" being seasonings.. like green onion, peppers, tomatoes, garlic, basil/cilantro/terragon/etc (whatever you like), salt, pepper & maybe some onion or shallot.. dry all of it & put it in air tight baggies & store for later.
you can also make kimchi/pickles with zucchini kimchi lasts from 3 months to a year... maybe pickle it in miso... i have a miso recipe around here somewhere if you want it.
shred it and use it as a garnish for soups & dishes...
you could use it in a dessert. my grandma used to make zucchini bread & it tasted almost exactly like banana bread. so you can really play up the sweet factor with zucchini. it's not solely a savory thing.
put it in your green smoothies.
cut it like a chip and use it fresh for dips, salsas and nacho recipes.
make raw lasagna.. you can use eggplant as well.
chop it up very finely and use it as "rice"... make "spanish rice", indian food, asian food or mexican food & use it in those.
that's all i can think of at the moment.

Just wanted to check back in and say that I give the Thumbs up on the zucchini chips. The first batch I marinated the zuke slices in Alissa's Italian dressing. These came out amazing!:p You can use these as a topping on a salad, roll them into your corn tortilla, or find other fun ways to
add them to your raw dishes.
Now I am dehydrating a second batch but this time I am using half water and half EVOO instead of the full amount of EVOO in the original recipe, since I want to make the chips less calorie dense. I will post how these come out.

Just read on another site for organic gardening that this one guy's wife shreds and freezes.
Would probably be great to do that and use as needed for zuchini hummus. Also decreases worries about blades getting too hot, lol!

I love Alissa's zucchini pasta w/ marinara, and Ani Phyo's Sun Dried Tomato Hummus (has two cups of zucchini in it). :)
