zucchini and onions [Archive]

I used to love fried zucchini and onions. Thought I couldn't have them anymore until I got a bright idea to mix them with some oil and spices and soften them in the dehydrator at 105 for a few hours. I made them again today and coated them with Alissa's Creamy Italian Herb Dressing (p. 474) instead of the oil and spices that I used the first time. Mmmm.
