Hello all! Just want to share a very simple cookie that I made this week. It's my first experiment without a recipe, and I was thrilled with the results.
Puree in the blender:
- 15 dates
- 1 tbsp of coconut butter
- 1 tsp of honey
- 2 rounded tbsp of grated ginger
- splash of water
Stir in:
- 1 cup of sesame seeds
I spread some of the mixture thinly before dehydrating (to create a cracker-like texture), and shaped some of the mixture into thicker round cookies. Then I dehydrated overnight, flipped everything in the morning, and dehydrated another 10 hours.
They're sooooooo good! The thin ones are crunchy and the thicker cookies are soft and chewy. I kept sneaking into the dehydrator to eat them...there was only about half a batch left by the time they were actually ready. After tasting them, my non-raw friend asked where I'd bought them...she said they were the best ginger cookies she'd ever tasted. And I agree with her. Delicious!
