I LOVE onions and would love new recipes to try with them - as I seen someone say they marinated their onions for the dehydrator...what do you marinate them in?
I have made the onio bread and love it!!
Thanks
Sandy

Every couple months I love to make the marinated onions recipe in the "Raw Food Primer". It is extra special. One large or two smaller thinly sliced white onions marinated in a mixture of 1/2 cup honey and 1/2 cup apple cider vinegar with 1 T. nama shoyu. Cover and refrigerate at least 24 hours. When the onion is gone, add another onion. The marinade will keep for 2 weeks.
For dehydrating onions I have only tried it one way. Cover the sliced rings in water with a half cup of sea salt and a T. of lemon juice. Soak for an hour or two, more if covered in the fridge. This softens them and takes out some of the strong juices. After soaking, rinse well and drain, then coat them with a nut or seed dressing and dehydrate. I like the dressing mix suggested in another recipe book (I forget the name); blend 1 and a half peeled, chopped oranges with 1/2 cup white sesame seeds and 1 pitted date. Mix the soaked, drained rings with 1/2 the dressing. Dehydrate on para-flex sheets for 3-6 hours, turn and paint the other side with the rest of the dressing and dehydrate for another 12-18 hours. Too much work though! I don't really think painting the dressing on the other side makes that much difference.
Onion bread is one of my favs. I've got some in the dehydrator right now. :)
