I have been trying to get a good Corn chip replacement ever since I went Raw... Most recipes I have used simply didn't do it for me. I went to work and came up with this recipe that I posted on my blog (http://duaneepperly.spaces.live.com/blog/cns!486E62B391467F29!623.entry).

Thanks for posting this recipe. I just picked up some corn at the market and will definitely be trying it out. We love corn chips and salsa!

Just put this in the dehydrator, as I had some corn on hand. Tweaked the recipe as I didn't have any cumin, so I put in some nutritional yeast and some tabasco-type of hot sauce for a cheezy-spicy flavor. Hope they come out!
Update during evening: DH has his head in these chips!!! - LOL! They are so-o good! They cry out for some guacomole to go with them!

I am glad you liked it recipe. I changed the corn bread up a bit just yesterday by adding some sunflower seeds to give it that multi-grain texture. I really liked the touch, I posted about it on my Blog (http://duaneepperly.spaces.live.com/blog/cns!486E62B391467F29!629.entry). I included some pictures in this post.

What does anyone think of subbing in chia for the flax???

Made this recipe exactly as directed for one batch. YUM :p
Then I made another batch and added zucchini, garlic, lime juice, and red pepper flakes. YUMMY
Thanks for the ideas. I have wanted to make corn tortillas but have been waiting for the corn season to arrive. I like both of the above recipes, but I get to use some of my more than abundant zucchini in the second version, which is a plus.:D

well - I followed the recipe exactly, except for subbing ground chia seeds.
The mixture did not thicken up at all - I think the chia seeds take more time than flax.
It's in the dehydrator - I will report on the results:p

thanks for sharing...LOL, I just made corn tortillas last night myself!
You all probably know this, but just want to be a stinker and remind you that if it's not organic corn, chances are it's GMO....sigh. better check with the farmer, or grow it yourself......

It's true, even trying to find heirloom corn seeds local for us proved to be impossible:mad:. Next year we will be planning ahead and ordering heirloom seeds well ahead of the planting season.

mine did not come out very good at all......
they are crisp - but bitter.
The recipe said a Tablespoon of cumin....are you sure it shouldnt' be just a s teaspoon? I thought it was too much at the time, but went ahead......
I Tablespoon is an aweful lot.

I am a big fan of Cumin. I grind my own out of seeds and it tends to add a rich flavor more than a bitter one for me. I just added a note to use less to your taste for future readers. For me testing and tweaking things to suite my taste is what it's all about.
