I read somewhere that rice is heated to get it that dry, is rice considered raw? Also how is it nutritionally?

wild rice is the only rice you can sprout and eat. ;)

I can get it anywhere here, but then people here demand healthy foods. Not sure how things are in your area.

Wild rice is not raw. Is is toasted to make it digestible. Sorry to burst anyone's bubble.
Have you tried making rice from cauliflower or jicama?

there's some wild rice on ebay... they harvest it themselves... might check into it. :) it's from some native american reserve in Minnesota or something.

but if i was going to make something that needed rice, i would just chop up some mung bean sprouts and use that. :) cause it's light and fluffy and mild.

Soaked/sprouted buckwheat isn't bad, either. A bit gooey, but if you make some sort of dressing for it like you would a salad it's not bad.
